Rich Homemade Coconut Milk for Full GAPS

Unsweetened homemade coconut milk made with equal cups of shredded coconut and water: bring to a boil, cool completely, blend, and strain. One small batch; measure the finished yield.
Prep Time 10 minutes
Cook Time 5 minutes
Estimated Cooling 30 minutes
Total Time 45 minutes
Servings: 1 batch (strained volume varies)
Course: Beverage

Ingredients

  • 1 cup unsweetened shredded coconut single ingredient: coconut
  • 1 cup filtered water measured before heating

Equipment

  • Small saucepan; Le Creuset Artichaut 1.75-quart saucepan
  • Ninja BN801 with 72-ounce pitcher; 64-ounce maximum liquid capacity
  • Heat-safe support and cooling vessel
  • Fine-mesh strainer and cheesecloth
  • Stable bowl
  • Measuring cup
  • Covered glass jar

Method

  1. Put the measured coconut and water in a small saucepan. Stir to wet the shreds. Bring to a boil over medium heat, stirring as needed. Remove from the heat once bubbling throughout; do not reduce the liquid or brown the coconut.
  2. Cool the entire mixture completely to room temperature in a heat-safe vessel. Allow longer than the estimated cooling time if needed. Do not blend hot or warm liquid in the Ninja.
  3. Transfer all the cooled coconut and water to the Ninja BN801 pitcher, staying below its marked maximum liquid line. Secure the lid and blend until the liquid is evenly opaque and the coconut is broken into fine particles. Stop before opening.
  4. Set a cheesecloth-lined fine strainer securely over a bowl. Pour the blended mixture through the strainer with the pitcher lid secured. Let it drain, then gather the cloth and press gently to recover milk while keeping the pulp contained.
  5. Measure the finished strained milk before using it in another recipe. The strained volume varies with the coconut and liquid left in the pulp. Transfer to a clean covered glass jar and refrigerate promptly. Stir or shake before measuring.

Notes

Timing: Ten minutes preparation, five minutes heating, and thirty minutes cooling are approximate planning times. Allow about forty-five minutes or longer. Bring the mixture just to a boil, then wait until it is completely at room temperature before blending.
Yield: One batch, not a guaranteed cup of finished milk. Some water stays in the pulp or evaporates. Measure after straining. Prepare another batch if the next recipe needs more; adding water changes the concentration.
GAPS: Full GAPS after coconut is introduced. Dairy-free, egg-free, and unsweetened. Not an early Intro or No-Plant preparation. Use plain shredded coconut, not sweetened coconut or coconut flour.
Storage: Refrigerate promptly in a clean covered jar and plan to use within three days. Stir or shake natural separation back together before measuring. Freeze extra with expansion space, thaw in the refrigerator, and mix well.
Scaling: 2× doubles both measured ingredients and makes two batches worth of milk. Use enough saucepan space and blend in portions if necessary. Keep each portion below the marked liquid limit and completely cooled. Heating and cooling do not follow an exact doubled clock.
