Pumpkin Hot Cocoa for Later Full GAPS

One warm coconut-milk pumpkin cocoa with gentle spice, pure cocoa butter, honey, and an optional raw egg yolk, for an occasional later Full GAPS cocoa trial.
Servings: 1 mug
Course: Beverage, Snack
Cuisine: GAPS

Ingredients

  • 1 cup homemade coconut milk plain, additive-free, and not canned
  • 1/4 cup freshly cooked pumpkin puree soft enough to mash smoothly
  • 1/8 teaspoon ground cinnamon pure spice
  • 1 pinch ground ginger pure spice
  • 1 pinch ground cloves pure spice
  • 1 teaspoon pure cocoa butter not sweetened chocolate
  • 1/8 teaspoon sea salt
  • 1 teaspoon pure organic cocoa powder later Full GAPS occasional trial only after digestive symptoms have disappeared
  • 2 teaspoons natural honey
  • 1 raw egg yolk optional; add after warming
  • freshly grated nutmeg for garnish

Equipment

  • 1 Small stainless saucepan a one-mug batch needs gentle heat
  • 1 Whisk or immersion blender for smoothing pumpkin and cocoa
  • 1 Fine grater for fresh nutmeg
  • 1 Heatproof mug for serving

Method

  1. Put the homemade coconut milk, cooked pumpkin, cinnamon, pinches of ginger and cloves, cocoa butter, sea salt, pure cocoa powder, and honey in a small stainless saucepan. Warm gently, stirring around the bottom and sides, until the cocoa butter melts and faint steam rises. Do not bring the one-mug mixture to a hard boil.

  2. Whisk briskly, or briefly use an immersion blender, until the pumpkin and cocoa blend into an even light-brown drink. Look for no dry cocoa pockets or pumpkin lumps and a little froth across the top.

  3. If using the optional egg yolk, remove the saucepan from the heat, add one raw yolk without the white, and whip for about a minute until the cocoa looks uniform and frothy.
  4. Pour into one heatproof mug, grate a little nutmeg over the top, and serve warm. For a cold drink, warm and blend the base first, then cool and chill it; whisk again before serving.

Notes

Later Full GAPS: Pure organic cocoa powder is an occasional later trial only after digestive symptoms have disappeared. Observe the first trial.
Milk: Use homemade coconut milk, not canned or additive-containing packaged milk.
Optional yolk: Add the yolk after removing the warmed cocoa from the heat, then whisk until frothy.
Yield: One warm mug.
