Method
- Pour the filtered water into a small bowl. Sprinkle in the gelatin and whisk until the liquid looks evenly cloudy and smooth. Set it aside while you warm the coconut milk.
- Pour the homemade coconut milk into a small saucepan. Warm over medium heat until hot and steaming lightly, but not boiling. Stir along the bottom as it warms.
- Pour the water-and-gelatin mixture into the warm coconut milk while stirring. Whisk until smooth and no gelatin grains remain. If small clumps remain, continue stirring over low heat until dissolved. Do not boil.
- Stir in the raw honey and fresh orange zest until the honey has dissolved and the zest is spread through the creamy liquid.
- Add the pomegranate seeds and stir only for a few seconds, just long enough to distribute them. Do not mash the arils.
- Pour into a clean silicone mold. Set the mold on a small tray before filling if it needs to be moved to the refrigerator.
- Refrigerate for about 2 hours, until the center holds together when you tilt the mold gently. Chill longer if the middle still shifts like liquid.
- Press gently on the bottom of each silicone cavity to release the pieces. Serve cold. If a piece bends or leaves liquid behind, chill the mold longer before unmolding the rest.
