Two modest scoops of piña colada sorbet for Full GAPS in a small stoneware bowl

Piña Colada Sorbet for Full GAPS

A four-ingredient Full GAPS pineapple-coconut sorbet blended in the Ninja BN801 with frozen-fruit and coconut-butter texture cues.
Servings: 1 small batch
Course: Dessert, Snack
Cuisine: GAPS, Tropical-Inspired

Ingredients

  • 1 c finely chopped fresh pineapple frozen
  • 1 tbsp homemade coconut milk stirred before measuring
  • 2 tbsp homemade coconut butter melted and cooled until fluid but not hot
  • 1 pinch mineral salt

Equipment

  • Ninja Professional Plus Kitchen System BN801 base
  • Ninja BN801 single-serve cup and blade assembly
  • Cutting board and sharp chef's knife
  • 1-cup and tablespoon measures
  • Small silicone spatula
  • Small freezer-safe glass container with lid
  • Small serving bowl and spoon

Method

  1. Add the frozen pineapple, homemade coconut milk, and mineral salt to the Ninja BN801 single-serve cup. If the blades cannot catch the fruit, let the filled cup stand about 5 minutes so the edges soften slightly.

  2. Fit the blade assembly and lock the cup onto the base. Pulse, then blend. Stop the motor completely before removing the cup and scraping the sides. Continue until no hard pineapple chunks remain and the base moves as a thick frozen mass.
  3. Open the upright cup and add the melted, barely warm coconut butter. Refit the blade and blend again. It may harden at first; continue until only small evenly distributed coconut flecks remain.

  4. Serve immediately when the sorbet holds a soft scoop instead of pouring, or freeze in a covered freezer-safe glass container and soften naturally until scoopable before serving.

Notes

GAPS placement: Full GAPS after fresh pineapple, homemade coconut milk, coconut butter, and mineral salt are introduced and tolerated.
Fruit: Use frozen fresh pineapple, not canned or syrup-packed fruit.
Coconut: Use the linked homemade coconut milk and coconut butter; commercial gums, starches, sweeteners, and unidentified coconut spreads are omitted.
Timing: The source provides only an optional 5-minute softening cue, so the card does not invent prep, blend, or freezing times.
