A creamy dairy-free citrus smoothie made from homemade coconut milk, raw egg yolk, ripe banana, orange, and ice, with no added sweetener.
Prep Time 5 minutes
Total Time 5 minutes
Servings: 2 glasses
Course: Beverage, Breakfast
Cuisine: GAPS

Ingredients

  • 1 cup thick homemade coconut milk plain and additive-free; not canned coconut milk
  • 1 raw egg yolk from a fresh egg, separated from the white
  • 1 small orange peeled and seeded
  • 1/2 ripe banana skin has brown spots; peeled
  • 1/2 cup ice cubes

Equipment

  • 1 Blender that can process ice a compact cup blender or a larger jar blender
  • 1 Knife and cutting board for peeling and checking the orange
  • 1 Measuring cup for coconut milk and ice
  • 2 Serving glasses serve as soon as blended

Method

  1. Peel one small orange and remove any seeds. Peel half a ripe, brown-spotted banana. Measure one cup thick homemade coconut milk, one raw egg yolk, and half a cup ice cubes.
  2. Pour the coconut milk into a blender cup or jar. Add the orange pieces, half banana, egg yolk, and ice. Keep the ingredients below the blender's fill line; before blending, the white milk and separate fruit pieces should still be visible.

  3. Close the blender and blend until the fruit and ice have disappeared into a uniform pale-orange smoothie. Look for a light froth and no hard ice pieces or fruit chunks. If pieces remain above the blades, let the mixture settle and blend again.

  4. Pour into two glasses and serve while cold and lightly frothy. No added sweetener is needed in the measured blend.

Notes

Full GAPS: Use thick homemade coconut milk, not canned coconut milk, and a ripe banana with brown spots on the skin.
Egg: The measured smoothie uses one raw yolk, not a whole egg.
Texture: The drink is ready when it is creamy, pale orange, and free of fruit chunks or hard ice pieces. Serve soon after blending.
