Ingredients

Nightshade-Free BBQ Sauce
  • 4 whole carrots roughly chopped
  • 1 small beet roughly chopped
  • 1 small onion peeled and roughly chopped
  • 2/3 cup prepared homemade chicken meat stock raw-meaty stock
  • 1/4 cup apple cider vinegar
  • 1/4 cup fat rendered from additive-free uncured bacon optional
  • 3 tablespoons raw honey
  • 3 tablespoons coconut aminos with a Full GAPS-compatible ingredient list
  • 2 tablespoons fresh ginger grated, then measured
  • 2 cloves garlic
  • 1 teaspoon traditionally fermented additive-free fish sauce optional
  • 1/4 teaspoon natural sea salt

Equipment

  • Stainless-steel pot with steamer basket and lid
  • High-powered blender with glass vessel
  • Measuring cups and spoons
  • Clean 2-cup glass jar

Method

  1. Put the carrots, beet, and onion in a stainless-steel steamer basket over boiling water. Cover and steam for about 15 minutes, until a knife slides through the largest pieces with little resistance.

  2. Transfer the tender vegetables to a high-powered blender. Add the chicken meat stock, apple cider vinegar, optional bacon fat, raw honey, coconut aminos, ginger, garlic, optional fish sauce, and sea salt.
  3. Secure the lid. Start on low, then increase to medium or medium-high once the mixture moves freely. Blend for about 45 seconds, until the sauce is uniformly burgundy with no pale onion streaks, carrot edges, or gritty beet pieces.

  4. Cool enough to transfer safely, pour into a clean glass jar, seal, and refrigerate. The batch makes about 2 cups.

Notes

Full GAPS; not the Introduction Diet. Use honey, omit maple syrup and molasses, and use chicken meat stock rather than bone broth.
Optional additive-free bacon fat and compatible traditionally fermented fish sauce may be omitted.
Refrigerate up to 5 days. The source also freezes leftover sauce; thaw it in the refrigerator and stir before use.
At 2x, the card yields 4 cups with 8 carrots, 2 beets, 2 onions, 1.33 cups stock, 1/2 cup vinegar, and 6 tablespoons honey.
