A thick, mild Full GAPS avocado mayo made with one Hass avocado, raw olive oil, apple cider vinegar, garlic, and an optional egg-free route.
Prep Time 5 minutes
Total Time 5 minutes
Servings: 1 small batch
Course: Condiment, Dip, Full GAPS

Ingredients

  • 1/3 cup cold-pressed extra-virgin olive oil
  • 1 tablespoon raw apple cider vinegar
  • 1 raw egg yolk optional; omit for egg-free
  • 1 clove fresh garlic crushed
  • 1 ripe Hass avocado
  • 1/4 teaspoon mineral salt
  • 1/8 teaspoon black pepper

Equipment

  • One-cup glass measuring cup
  • One-tablespoon measure
  • Ninja Professional Plus Kitchen System BN801 24-ounce single-serve cup, compatible blade assembly, and motor base
  • Small silicone spatula
  • Small glass storage jar

Method

  1. Measure 1/3 cup raw olive oil in a glass cup and 1 level tablespoon raw apple cider vinegar separately.
One-third cup raw olive oil and one tablespoon apple cider vinegar measured for mild Full GAPS avocado mayo
  2. Pour both liquids into the Ninja BN801 single-serve cup. Add the optional yolk, crushed garlic, avocado flesh, mineral salt, and black pepper. Press the avocado into the liquid and keep everything below the MAX LIQUID line.
  3. Secure the compatible blade assembly, invert and lock the cup onto the BN801 base, and use short pulses until the avocado moves through the liquid. Blend only until evenly pale green.
  4. Return the cup upright and remove the blade assembly. The mayo should be glossy and thick, with no avocado pieces or oil ring. Scrape, reseal, and pulse again only if needed.

  5. Lift a spoonful. A rounded dollop should hold its shape instead of running off. Transfer to a small glass bowl and serve.

Notes

Full GAPS: Use raw cold-pressed extra-virgin olive oil, additive-free raw apple cider vinegar, Hass avocado, fresh garlic, mineral salt, and pepper.
Egg-free: Omit the raw egg yolk and keep every other measurement the same.
Yield: One small batch without a fixed volume or serving count.
Storage: Best made close to serving because fresh avocado darkens after cutting.
