Loaded Cauliflower Soup With Bacon And Cheddar For Full GAPS

Full GAPS loaded cauliflower soup with homemade meat stock, drained yogurt cheese, cheddar and a crisp homemade bacon topping. The cauliflower base is cooled before Ninja blending, then gently reheated with the cheddar. Makes eight servings; cooling and finishing add time.
Vegetable Cooking 40 minutes
Servings: 8 servings
Course: Full GAPS, Soup

Ingredients

  • 1/2 pound homemade salt-only bacon Cut into roughly one-inch pieces; cook and reserve for topping, keeping the rendered fat in the pot.
  • 1 onion Peel and chop.
  • 4 cloves garlic Peel and crush.
  • 2 pounds plain frozen cauliflower No added starch or sauce. Fresh option: one head in florets at 1×; head size varies.
  • 1 quart homemade beef meat stock Use the finished prepared stock. The same volume of chicken meat stock also works; see the linked recipe note.
  • 1 teaspoon natural sea salt Starting amount, to taste; stock, bacon and cheese already contribute salt.
  • 1/2 teaspoon black pepper To taste.
  • 1 teaspoon dried chives
  • 8 ounces homemade full-fat yogurt cheese Weigh the drained finished curd, not loose yogurt; blend with the cooled cauliflower base.
  • 4 ounces natural traditionally made sharp cheddar Weigh the block, then shred.
  • 4 green onions Use the white and light-green parts, sliced.
  • jalapeño slices Optional, for topping.
  • homemade cultured sour cream Optional, for topping.

Equipment

  • Stockpot, cutting board, knife and stirring spoon Cook the bacon, onion/garlic and covered cauliflower stages in the same pot.
  • Cheese grater and weighing/measuring tools Weigh the finished drained yogurt cheese and cheddar; measure prepared stock.
  • Shallow heat-safe cooling containers and optional ice-water bath Keep cooling water out of the soup; cool fully before Ninja blending.
  • Ninja BN801 pitcher with lid Blend cooled portions below the marked 64-fluid-ounce maximum liquid line; stop before opening.

Method

  1. Chop the prepared homemade bacon into roughly one-inch pieces. Cook it in a stockpot over medium heat until cooked through and as crisp as you like. Meanwhile, peel and chop the onion and peel and crush the garlic.
  2. Lift out the bacon, leaving its rendered fat in the pot. Keep the bacon separately covered in the refrigerator while the soup base cooks and cools.
  3. Add the onion and garlic to the bacon fat. Cook for about twenty minutes, stirring as needed, until the onion is soft and beginning to brown and the garlic smells fragrant. Reduce the heat if the garlic begins scorching.
  4. Add the cauliflower, measured finished meat stock, salt, pepper and dried chives. Cook over medium-high heat, covered, for about twenty minutes until the cauliflower is completely soft and easily mashed with a fork. Shred the cheddar and slice the green onions and optional jalapeño while the vegetables cook.
  5. Take the base off the heat. Transfer it to shallow heat-safe containers and cool it rapidly, using an ice-water bath around the container if helpful. Keep that cooling water out of the soup. For the Ninja BN801 route, wait until the mixture is completely at room temperature before blending.
  6. Divide the cooled soup base and drained yogurt cheese among blender batches as needed. Secure the Ninja BN801 pitcher and lid, keep every portion below its marked 64-fluid-ounce maximum liquid line, and blend until the cauliflower and soft cheese are evenly smooth. Stop before opening. Return all the blended soup to the pot.
  7. Warm gently over medium-low heat. Stir in the shredded cheddar and continue stirring until it melts and the soup is hot throughout. Keep the heat gentle rather than boiling the cheese mixture hard. Taste before adding any extra salt.
  8. Serve in eight portions, topping with the reserved cooked bacon and sliced green onions. Add optional jalapeño and homemade cultured sour cream at the table. Keep toppings separate from any soup you plan to store.

Notes

This recipe makes eight servings using the listed half-pound bacon, onion, four garlic cloves, two pounds frozen cauliflower, quart of prepared stock, measured seasonings, eight ounces drained yogurt cheese, four ounces cheddar and four green onions. Jalapeño and cultured sour cream are optional unmeasured toppings. A fresh cauliflower head is the fresh option for the original batch; head sizes vary.
For a smooth base, cool the cooked cauliflower mixture fully before Ninja BN801 blending. Blend it with the drained yogurt cheese in batches below the marked 64-fluid-ounce liquid maximum. Return it all to the pot and gently melt in the cheddar. Use the cooled-blending route rather than putting hot soup into the Ninja.
The 40-minute vegetable-cooking guide refers only to the two roughly twenty-minute vegetable stages. Bacon rendering, stock warm-up, complete cooling, batch blending and final cheese warming add time. No fixed preparation or whole-recipe total is stated. Check fork-soft cauliflower and a hot, evenly combined finish.
Homemade chicken meat stock can replace the beef stock at the same displayed volume. Use prepared, finished stock at the volume shown.
Cool leftovers promptly in shallow containers, refrigerate covered and use within three days. Keep bacon and fresh toppings separately chilled. Reheat leftovers to 165°F, then add toppings. Full GAPS after the actual dairy ingredients are introduced; egg-free and nut-free as written. Not a dairy-free or early Intro formula simply by removing toppings.
