Light Coconut Milk Eggnog With Homemade Vanilla for Full GAPS

A thin, lightly sweet, foamy dairy-free eggnog made from homemade coconut milk, three whole eggs, raw honey, homemade vanilla, and nutmeg on each glass.
Servings: 6 small glasses
Course: Beverage
Cuisine: GAPS

Ingredients

  • 3 cups homemade additive-free coconut milk completed and ready to blend
  • 3 fresh whole eggs raw, from a trusted source; whites included
  • 2 tablespoons natural raw honey adjust sweetness after tasting if desired
  • 1 1/2 teaspoons homemade vanilla extract without added sugar or non-GAPS additives
  • dash pure ground or freshly grated nutmeg for the filled glasses

Equipment

  • 1 Ninja Professional Plus Kitchen System BN801 with 72-ounce Total Crushing pitcher
  • 1 Measuring cups and spoons
  • 6 Small glass serving tumblers or 3 larger glasses
  • 1 Fine nutmeg grater optional when using whole nutmeg

Method

  1. Pour the homemade coconut milk into the Ninja BN801 pitcher. Add three whole eggs, the honey, and the homemade vanilla. Keep the nutmeg for the finished glasses.
Three eggs in coconut milk with honey, homemade vanilla and installed Ninja blades before blending
  2. Secure the lid and blend on high for 20 to 30 seconds, until the drink is one even pale-cream color with no yolk streaks and a light cap of small foam bubbles.
Light foamy eggnog with wet coated blades and splashes on the Ninja pitcher after blending
  3. If the pitcher rests for one to two minutes and the foam settles, blend again briefly to refresh it.
  4. Pour into three to six individual glasses according to glass size. Sprinkle a dash of pure ground nutmeg or grate a little fresh nutmeg onto each foam cap and serve.
  5. Refrigerate any eggnog not served immediately. Reblend briefly before serving the remainder to bring back the light foam.

Notes

Full GAPS: Make after whole raw eggs including whites, homemade coconut milk, raw honey, homemade vanilla and nutmeg are introduced and tolerated. This is not an Introduction Diet drink.
Eggs: Use fresh whole eggs from your own hens or a farmer you trust. All three eggs and their whites are part of this light formula.
Vanilla: Use one and one-half teaspoons homemade extract with no added sugar or non-GAPS additives.
Serving size: The batch serves about three larger glasses or six smaller glasses. Pour six small glasses or three larger ones.
Texture: This is thin, lightly sweet and pourable, with foam from the short blend. It is a separate drink from the richer eight-yolk coconut eggnog.
