  • 1 tablespoon fresh lemon juice Seeds removed.
  • 1 tablespoon honey
  • 2 teaspoons grated fresh ginger Finely grated.
  • 2 garlic cloves Minced.
  • 2 teaspoons raw cold-pressed unrefined sesame oil Keep unheated; not toasted oil.
  • dash pure cayenne pepper To taste.
  • natural sea salt To taste.
  • black pepper To taste.

Equipment

  • Stainless-steel hand whisk
  • Measuring spoons
  • Fine grater
  • Knife and cutting board

Method

  1. Measure the apple-cider vinegar, prepared peanut butter, olive oil, lemon juice, honey, grated ginger, minced garlic, sesame oil and cayenne into a small mixing bowl.
  2. Whisk until the peanut butter is fully combined with the liquids. Scrape the bottom and sides as needed, then whisk again until no thick peanut-butter pockets remain.
  3. Taste and add natural sea salt and black pepper to suit the finished mixture. Whisk to distribute them.
  4. Use as a dressing at serving, or transfer to a covered glass jar and refrigerate. Stir or whisk again before measuring a portion if the mixture separates.

Notes

Prepared Peanut Butter: Complete the separate preparation before beginning. Stir the spread and measure three level tablespoons of the finished ingredient.
Dairy: The linked peanut butter uses cultured whey. For a dairy-free option, use pure peanut butter made without dairy ingredients or a dairy starter.
Raw Oils: Both the olive and sesame oils remain unheated.
Ginger And Garlic: Grate and mince finely before whisking; this hand-mixed dressing retains those small pieces.
Lemon: This WFLI version uses lemon as its citrus ingredient for GAPS meat-and-vegetable meals.
Yield: One batch. Measure the portion needed for the meal.
Full GAPS: After peanuts and the remaining ingredients have been introduced. Contains peanuts and sesame, and dairy with the linked whey-prepared spread. No eggs in the measured formula.
Doubling: Double every numeric ingredient amount. Salt, pepper and the unmeasured dash of cayenne remain to taste.
Storage: Cover and refrigerate. Stir or whisk before serving if separated.
