Hot-Water Coconut Milk

Full GAPS coconut milk with 1½ cups plain coconut and 2½ cups filtered water. Start hot in a heat-safe bowl, cool completely, then blend in the Ninja BN801 and strain. About 2½ cups; 10 minutes hands-on plus cooling.
Prep Time 10 minutes
Servings: 2.5 cups (about)
Course: Beverage

Ingredients

  • 2 1/2 cups hot filtered water
  • 1 1/2 cups additive-free unsweetened shredded or flaked coconut

Equipment

  • Ninja BN801 with 72-ounce pitcher, stacked blade assembly and locking lid
  • Heat-safe glass or ceramic bowl for hot-water mixture
  • Stainless-steel colander or fine-mesh strainer
  • Unbleached cheesecloth or clean thin linen tea towel
  • Catching bowl and covered glass jar

Method

  1. Combine and cool. Put 1½ cups of coconut in a heat-safe bowl and add the 2½ cups of hot filtered water. Stir to wet the pieces. Let the entire mixture cool completely to room temperature before using the Ninja. Keep the coconut and all its liquid together.
  2. Blend the cooled mixture. Install the stacked blade assembly in the BN801 pitcher, then add the cooled coconut and water. Stay below the marked MAX LIQUID line and lock the lid. Blend until the liquid is evenly white and the coconut has broken into fine particles. Stop the machine and wait for the blades to stop before opening.
  3. Strain. Line the strainer with your cloth and support it securely over the catching bowl. With the pitcher lid secured, pour the mixture through its spout into the cloth. Let the milk drain freely before gathering the cloth.
  4. Press gently. Gather the cloth around the pulp and press to release more milk. The stream will slow to drips. Stop when the pulp is damp and compact rather than forcing fine pieces through the fabric.
  5. Measure and store. Measure the strained milk; expect about 2½ cups, with some variation from pressing. Transfer it to a clean covered jar and refrigerate promptly. Stir or shake before measuring it into another recipe.
  6. Save the pulp. Put the damp pulp in its own covered container for the linked coconut-flour recipe. Keep the milk and pulp labeled separately.

Notes

Cool the entire mixture completely to room temperature before the BN801; never blend hot or warm liquid. About 10 minutes hands-on, plus variable cooling time. Keep all the measured water with the coconut. For 2×, use two original-size blending runs. Yield is about 2½ cups; measure after straining. Refrigerate promptly. Save the pulp for homemade coconut flour.
