Honey Tomato Meatloaf Glaze With Beef Meat Stock for Full GAPS

A Full GAPS tomato-and-honey glaze made with homemade beef meat stock and chili powder. Mix in a bowl and spread over meatloaf before baking.
Servings: 1 batch
Course: Full GAPS, Sauce

Ingredients

  • 10 tablespoons plain tomato paste tomatoes only, with salt as the only possible addition
  • 2 tablespoons raw honey
  • 1/2 teaspoon sea salt
  • 1 tablespoon plain chili powder hot or mild, without additives
  • 11 tablespoons homemade beef meat stock finished and strained

Equipment

  • 1 Glass or ceramic mixing bowl
  • 1 Spoon or spatula
  • 1 Measuring spoons and cup

Method

  1. Put the tomato paste, honey, salt and chili powder in a mixing bowl. Stir them together, pressing any firm honey into the paste.

  2. Gradually stir in the measured beef meat stock until the glaze is smooth. Scrape the sides and bottom so no dense paste or separate honey remains.

  3. Spread the batch evenly over the shaped meatloaf before baking. Cook with the meatloaf according to its recipe; do not separately simmer or reduce the glaze.

Notes

One batch supplies the measured topping for one eight-serving spicy beef meatloaf with vegetables. The stock amount is 11 tablespoons, equivalent to 1/2 cup plus 3 tablespoons.
Full GAPS after the ingredients are introduced and tolerated. Tomato and chili are nightshades. Mild chili powder changes the heat, but does not make this glaze nightshade-free.
If the finished stock has gelled, gently warm the measured portion until it flows, then cool enough for comfortable mixing. Refrigerate prepared glaze promptly in a covered container. Keep a clean portion separate before spreading on raw meat.
