Honey Lemon Jello Cups for Full GAPS

Firm chilled lemon jello cups with fresh lemon juice, fine zest, plain beef gelatin, and honey. Begin checking small cups after 30–45 minutes; serve when fully set.
Servings: 1 batch
Course: Dessert, Snack
Cuisine: GAPS

Ingredients

  • 2 cups filtered water cool, for hydrating gelatin
  • 3 tablespoons plain Great Lakes beef gelatin level tablespoons; gelling gelatin, not collagen peptides
  • 2 fresh lemons juice of; remove seeds
  • 1 teaspoon finely grated lemon zest yellow outer peel only
  • 2 tablespoons raw honey plus a little more to taste if wanted, before chilling

Equipment

  • Small stainless steel saucepan
  • Tablespoon and teaspoon measures
  • Fine zest grater
  • Citrus juicer or small juice cup
  • Strainer for seeds
  • Wooden or stainless-steel spoon
  • Small glass dessert cups and carrying tray

Method

  1. Put the cool measured water in a small stainless-steel saucepan. Sprinkle the gelatin evenly across the surface and let it hydrate for about five minutes. Look for a swollen wet layer without pale dry powder pockets. Use only the water already measured for the recipe.
  2. Warm over medium heat, stirring, until the hydrated gelatin loosens and all separate grains or clumps dissolve. The liquid should run smoothly from the spoon. Lower the heat if bubbling strongly; do not reduce the liquid. Remove from the heat when dissolved.
  3. Stir in freshly squeezed lemon juice with seeds removed, finely grated zest, and raw honey until the honey is evenly dissolved. The warm liquid may be lightly cloudy with fine yellow zest flecks. Taste a cooled spoonful and add a little more honey if wanted before pouring.
  4. Divide among small glass dessert cups, leaving space at the top. Refrigerate until fully set, beginning to check after 30–45 minutes. Gently tilt a cup: the center should move as a gel rather than let liquid slide across it. Deeper cups or a larger batch can need longer. Keep covered and refrigerated and serve cold in the cups.

Notes

Yield: One batch. Divide among small glass cups; the number depends on cup size and the juice from your lemons.
Time: Hydrate gelatin for about 5 minutes, then warm until dissolved. Begin checking small refrigerated cups after 30–45 minutes, allowing longer until the centers are fully set. Lemon preparation, heating, and total elapsed time vary.
Gelatin: Keep the measured three tablespoons with two cups water plus juice of two lemons. Use the specified plain gelling beef gelatin. Collagen peptides are not a replacement.
Sweetener: Honey only. Begin with the measured two tablespoons and taste a cooled spoonful before adding a little more if wanted. No stevia. Make sweetness adjustments before the cups set.
GAPS: Full GAPS with introduced fresh citrus, honey, and plain gelatin. Powdered gelatin dessert is not an early Intro meat-stock recipe. This lemon/honey formula does not fit No-Plant GAPS and is not labeled ketogenic.
Storage: Keep covered and refrigerated. Serve cold in the cups; no unmolding, whipping, or freezing step.
Scaling: 2× doubles all five measured ingredient amounts for two batches. Extra honey remains to taste. Use more small cups rather than a deeper single bowl if you want similar chilling behavior; do not assume chilling time doubles or remains identical.
