Method
- Put the frozen carrots in a stainless-steel colander. Rinse under warm water until the heavy frost is gone and the pieces separate. Drain very well; the carrots should look damp without leaving a puddle.

- Melt the coconut oil in a heavy cast-iron skillet over medium-low heat. The oil should be clear and fluid, not smoking.
- Add the drained carrots in an even layer. Cook for 5 to 8 minutes, stirring now and then, until no icy centers remain, the surface water evaporates, and a fork enters a thick piece with light resistance.

- Lower the heat slightly. Grate the fresh ginger finely over the carrots and stir well. Cook only until the sharp raw aroma softens, without browning the ginger.
- Add the cinnamon, honey, and a light sprinkle of sea salt. Stir until the honey thins and every carrot has a light even sheen with no syrup pooling in the pan.
- Taste and add a little more cinnamon or honey only if wanted. Remove from the heat, add optional homemade ghee if desired, and serve warm.
Notes
Full GAPS: Use plain uncoated frozen carrots, virgin coconut oil, pure spices, raw honey, natural sea salt, and homemade ghee.
Yield: The source gives one pound of finished carrots and no serving count, so the card does not invent servings.
Ghee: Optional and unmeasured. Add to taste after cooking.
Scaling: The 2x card makes two pounds of carrots with four tablespoons coconut oil, one-half teaspoon ginger, two pinches cinnamon, four teaspoons honey, and two light sprinkles salt. Cook in two skillets or batches.
