Method
- Measure three cups of finished, fully dry crispy pecans into a roomy heatproof glass or stainless-steel bowl. Have the finishing salt and heatproof spoon ready.
- Melt half a cup of homemade unsalted butter in a saucepan over medium-high heat, stirring constantly.
- Add the one cup of raw honey to the melted butter and bring the mixture to a boil. Start the boiling timer once it is boiling.
- Boil for about three minutes, stirring constantly.
- Remove from the heat and allow to cool briefly. Let the vigorous bubbling settle while keeping the coating warm and fluid enough to pour.
- Pour the warm caramel over the prepared pecans and stir to coat, bringing the nuts up from the bottom of the bowl.
- Sprinkle half a teaspoon of sea salt over the coated nuts, or adjust to taste. Serve warm and gooey in small portions.
Notes
Pecans: Start with three cups of finished, fully dry crispy pecans. Their soaking and drying are separate advance preparation, not part of the caramel boiling time.
Butter: Use half a cup homemade unsalted butter after ordinary butter is introduced. Keep the finishing salt separate.
Honey: Raw honey is the starting ingredient; it is heated in this recipe. Honey is a sweetener, not a sugar-free ingredient.
Timing: Boil the honey and melted butter mixture about three minutes while stirring constantly, starting when it is boiling. Melting, reaching the boil, brief cooling and coating take additional time. The card Boiling Time is not a fixed full-recipe total.
Finish: Cool briefly while the coating stays warm and pourable, coat the pecans, then add half a teaspoon sea salt or adjust to taste. Serve warm and gooey; no brittle temperature or hard-set endpoint is specified.
Yield: One batch from three cups prepared pecans. No fixed serving, candy-piece count or final volume is promised.
Storage: Cool and refrigerate promptly in a covered container; use within three to four days. Warm a small portion in a saucepan over low heat, stirring until the coating loosens rather than boiling the whole batch again.
GAPS: Full GAPS after whole prepared nuts and ordinary butter are introduced. Contains dairy and pecans; no eggs. Serve as a small between-meal treat.
Scaling: At 2× use two cups honey, one cup butter, six cups prepared pecans and one teaspoon finishing salt or adjust to taste. Use enough pan and bowl space and follow the same boiling and warm-coating sequence.
