  • 1/4 teaspoon ground black pepper Plain, single spice.
  • 1/8 teaspoon ground cayenne pepper Plain, single spice.

  • Small glass jar with lid Clean and completely dry; leave mixing room.

Method

  1. Measure all five ingredients into a small, clean, completely dry glass jar. Stir until the color is even and no pockets of salt or cumin remain, then close the lid. Store in a dry cupboard and use as needed.

Notes

Makes one small batch. The individual measures add up to 11 3/8 teaspoons, just under 4 tablespoons, before mixing and settling. Packet sizes vary; this is one small homemade batch.
Two tablespoons per pound of ground meat is a starting point; taste the cooked food and adjust. The blend already contains salt. Use the liquid directions for the actual dish; this seasoning contains no starch thickener.
Add fresh crushed garlic to the meat while cooking, not to the stored dry mixture. Keep the jar closed in a dry cupboard away from stove steam and use dry utensils. Keep the original spice labels to check their ingredients and best-before dates.
Full GAPS. This dried-spice blend is not an Intro seasoning or a nightshade-free blend. Double all five amounts together for two small batches.
