Method
- Rinse and dry the vegetables. Trim asparagus and cut the vegetables into bite-size pieces of similar thickness.
- Toss the vegetables with the minced garlic, your chosen cooking fat, the total herb-and-spice blend, and salt and pepper to taste.
- Wrap the vegetables in parchment. Place the parchment packet on one or two layers of foil and seal tightly, keeping the seam at the top. Divide into two packets if needed to avoid a thick mound.
- Place packets seam-side up on a hot grill. Check after 10 minutes. Grill for 10 to 40 minutes total, depending on vegetable density and desired doneness. Listen for crackling and sizzling.
- Remove with tongs and open away from your face because the steam is very hot. Test a thicker piece with a fork. Reseal and return to the grill if it needs more time.
- If the garlic smells scorched before the vegetables are tender, move the sealed packet to a cooler part of the grill and continue cooking there.
Notes
This is a Full GAPS side dish. Use the stage-specific food list rather than treating this mixed-vegetable recipe as an Introduction Diet recipe.
Use ghee, coconut oil, or rendered animal fat for the hot-cooked packet. The current Full GAPS guidance keeps plant oils for raw use.
Parchment is the food-contact inner layer. Keep the foil seam facing up. Do not use this packet timing for a grill basket.
The WPRM card uses the maximum 40-minute grill time for a 55-minute total that includes 15 minutes of prep. Grill time varies from 10 to 40 minutes.
