Grilled Chicken Salad With Avocado Mayo for Full GAPS

A four-serving Full GAPS green salad with two freshly cooked chicken breasts, eight cherry-tomato halves, linked avocado mayo dressing, and optional qualifying Parmesan.
Servings: 4 servings
Course: Dinner, Lunch, Salad
Cuisine: American, GAPS

Ingredients

  • 1 head lettuce torn, rinsed, and thoroughly drained
  • 2 boneless chicken breasts fresh, not precooked
  • coconut oil as needed for the skillet
  • 4 cherry tomatoes halved
  • 1 batch Tangy Avocado Mayo Dressing prepared separately
  • qualifying Parmesan cheese thinly shaved; optional, omit for dairy-free

Equipment

  • 10.25-inch Le Creuset Artichaut skillet
  • Large salad bowl
  • Cutting board and sharp knife
  • Salad servers

Method

  1. Tear the lettuce into bite-size pieces, rinse it well, and drain it until no water remains in the bottom of the bowl or clings in droplets to the leaves.
  2. Warm a 10.25-inch Le Creuset Artichaut skillet over medium heat with enough coconut oil to leave a thin film. Add the two fresh chicken breasts in a single layer. Cook, turning as needed, until both sides are deeply golden and the thickest centers are cooked through with no translucent flesh. Transfer to a board and rest before slicing.

  4. Add the prepared batch of Tangy Avocado Mayo Dressing and toss gently until the lettuce is lightly coated and the chicken and tomato pieces are distributed through the bowl.
