Ingredients

Ginger Tea Gummies
  • 2 cups filtered water
  • 1/2 cup beef gelatin
  • 6 tea bags plain ginger-only herbal tea or equivalent loose ginger tea
  • 1 to 3 tablespoons raw honey to taste

Equipment

  • Le Creuset Signature stainless saucepan
  • Long stainless spoon
  • Large heat-safe glass bowl
  • Silicone gummy molds
  • Uncoated stainless-steel sheet pans
  • Glass dropper
  • Measuring cups and spoons
  • Glass storage jars

Method

  1. Set about 4 empty silicone gummy molds on 1 to 2 uncoated stainless-steel sheet pans and clear enough refrigerator space for the pans to lie flat.
  2. Pour the filtered water into the stainless saucepan. Sprinkle the beef gelatin evenly over the surface, stir once, and leave it to bloom for several minutes, until pale hydrated granules and soft wrinkled islands cover much of the liquid.

  3. Heat over medium, stirring continuously, until the water is steaming and the gelatin is completely dissolved with no granules under the spoon. Do not boil.
  4. Put all 6 ginger tea bags in one large heat-safe glass bowl. Pour in the hot gelatin water, submerge the bags, and steep for 10 minutes.
  5. Remove the tea bags and let the gelatin tea cool from steaming to warm. Stir in 1 to 3 tablespoons raw honey until no amber ribbon remains.
  6. Fill the supported molds evenly with the dropper. Refrigerate for at least 6 hours, until the gummies release cleanly and spring back after gentle pressure. Unmold and store cold.
