Method
- Have the completed, strained chicken meat stock ready. Put 3 cups in a medium stainless-steel or enameled cast-iron saucepan over medium heat. Let any chilled gel melt, then heat to a gentle simmer with small bubbles breaking the surface.
- While the stock warms, whisk the 2 whole eggs with the pepper and optional turmeric in a small glass bowl or pouring cup using a fork or small whisk. Break up clear ropes of white until the mixture is fairly uniform and pourable; it does not need to become foamy.
- When the stock is simmering, lower the heat to medium-low. Whisk or stir the stock briskly in a circular motion while slowly pouring the egg mixture in a thin, steady stream. Keep the liquid moving so the egg forms soft strands rather than one large clump.
- After all the egg is in, stop whisking and continue the gentle simmer until the egg is cooked through, about another minute. The strands should look opaque and soft without clear, uncooked streaks. Avoid a prolonged hard boil that makes coarse, firm curds.
- Take off the heat, divide into 2 bowls and top with the optional thinly sliced green onions. Serve while the egg ribbons are soft. Making the chicken meat stock is a separate prior job; the 2-minute prep and 5-minute cook estimate assume prepared stock, with actual simmer and egg endpoints controlling timing.
Notes
Use completed, strained homemade chicken meat stock. Its preparation is separate from this quick soup. The 2-minute preparation and 5-minute cooking times give an approximate 7-minute finish once the stock is ready; a chilled batch may need longer to reach a simmer.
Turmeric is optional for color, and thinly sliced green onions are an optional fresh topping. The soup stays brothy, with soft egg ribbons and no starch slurry or added gelatin. Stop whisking after the egg mixture is in and let the strands cook through.
The seasoned bowl belongs with Full GAPS after its foods have been introduced. It is not the first yolk-only Intro preparation. For an unseasoned No-Plant variation once stock and eggs fit your menu, use salt-only chicken meat stock and leave out pepper, turmeric and green onions, keeping the stock and eggs unchanged.
At 2× use 6 cups stock, 4 eggs, optional 1/4 teaspoon turmeric, 2 pinches pepper and 6 optional green onions for 4 small bowls. Use a larger pan with room for circular stirring and keep the same thin pour and gentle finish.
The ribbons are softest freshly cooked. For advance preparation, keep the stock separate and add fresh eggs when making the soup. Refrigerate leftovers promptly in shallow containers, within 2 hours at 40°F or below, and use within 3 to 4 days, retaining an earlier storage date if the stock had already been stored. Reheat on the stove to 165°F; the ribbons can become firmer.
