Full GAPS egg salad with chopped eggs or leftover poultry, homemade mayonnaise, sweet onion and drained sauerkraut.
Prep Time 15 minutes
Total Time 15 minutes
Servings: 1 batch
Course: Lunch
Cuisine: GAPS

Ingredients

  • 6 large hard-boiled eggs peeled and chopped; a mixture of eggs with fully cooked leftover chicken or turkey also works
  • 4 tablespoons completed homemade Full GAPS mayonnaise use more only as needed to reach the desired consistency
  • 1/2 sweet onion finely diced
  • 1/2 cup sauerkraut drained; do not include juice
  • chopped pecans optional; soaked and dried
  • sliced black olives optional; additive-free
  • celery optional; thinly sliced

Equipment

  • Medium mixing bowl
  • Cutting board and knife
  • Measuring cups and spoons
  • Fine strainer
  • Broad spoon or spatula for folding
  • Saucepan and bowl of cold water if cooking eggs for this batch

Method

  1. Peel and chop six chilled hard-boiled eggs, or combine some of the chopped eggs with fully cooked leftover chicken or turkey until you have two cups total protein. Keep the pieces bite-sized and similar in size.
  2. Drain 1/2 cup sauerkraut thoroughly; the cabbage should remain moist but should not drip when lifted. Finely dice 1/2 sweet onion. Thinly slice celery if using it.
  3. Add the chopped eggs or poultry, sauerkraut, onion and 4 tablespoons completed homemade Full GAPS mayonnaise to a mixing bowl. Fold from the bottom until the ingredients are lightly coated and remain distinct.
  4. Check the texture. The salad should hold on a spoon, with egg/protein pieces, onion and sauerkraut still visible. Add extra mayonnaise a teaspoon at a time only if needed. Fold in optional soaked-and-dried chopped pecans, additive-free sliced black olives or celery.
  5. Taste a forkful and serve in lettuce leaves or in a bowl.

Notes

Makes one batch. Cook and chill eggs or leftover poultry before assembling; recipe timing covers assembly only. Full GAPS only. Prepare the separately linked homemade Full GAPS mayonnaise first, then measure four tablespoons for the salad.
