Method
- Pour the measured filtered water into a large glass or stainless-steel bowl. Squeeze all the measured lemons, remove any seeds from the juice, and stir the juice into the water.
- Wash the apples. Peel, core, and cut them into even rings or slices about ⅛ to ¼ inch thick. Use an apple peeler-corer-slicer, a sharp knife, or a mandoline with its food holder.
- Put the slices into the lemon water as you work through all the measured apples. Keep the slice thickness similar across the batch.
- Drain the apple slices and pat them dry with a clean towel. Arrange them on dehydrator trays in one layer with space around each piece. Use additional uncrowded loads if they do not fit.
- If using cinnamon, dust the slices lightly with the pure ground spice. Set the dehydrator for apples using the temperature or setting specified for your machine.
- Begin checking at about five hours; the usual guide for this method is five to six hours. Continue until each slice feels dry with no damp spot, allowing longer where needed. Thin pieces may snap; thicker dry pieces can bend with a leathery texture. Check a cooled sample for its final texture.
- Cool the finished chips completely before closing them in airtight glass containers. Keep the lid closed between servings. This recipe starts with six to eight apples. The number of finished chips varies.
Notes
Full GAPS: Use after fruit has been introduced and tolerated, as an appropriate between-meal fruit snack. If fruit is still being avoided because of diarrhea or abdominal pain, wait until it fits your progression. Dry chips do not replace an earlier soft cooked-fruit introduction.
Starting batch: This recipe starts with six to eight medium apples, the juice of two lemons, and four cups of water. The number of finished chips and servings varies. Optional cinnamon remains to taste.
Lemon water: Use fresh juice for the preparation bath; put slices in as you work, then drain and pat dry before loading the trays. Do not pour the bath into the dehydrator.
Drying: Use your machine’s apple-drying temperature or setting. Begin checking around five hours and continue until dry; five to six hours is a guide, not a guarantee for every thickness or machine. The custom time marks the first check, not a total ready time.
Texture: Check several pieces, including a thicker one, after cooling a sample. Thin pieces may snap; thicker pieces can remain dry and leathery. Damp spots need more drying.
Scaling: 2× begins with twelve to sixteen apples, four lemons, and eight cups water;3× begins with eighteen to twenty-four apples, six lemons, and twelve cups water. Keep slices in one layer and use additional tray loads rather than piling them up.
Storage: Cool completely before closing in airtight glass containers. Keep containers tightly closed to protect the dry texture; pack crisp and leathery pieces separately when keeping the textures distinct.
Separate recipe: The two-apple butter-and-cinnamon oven chips are a separate formula with a different preparation and turning schedule. Do not use that butter or its oven timing in this dehydrator batch.
