An unsweetened Full GAPS infused water made with peeled cucumber, fresh lemon, mint, grated ginger and filtered water.
Prep Time 5 minutes
Minimum Infusion 12 hours
Total Time 12 hours 5 minutes
Servings: 6 servings
Course: Beverage, Drink
Cuisine: American, GAPS

Ingredients

  • 1/2 cucumber peeled and sliced
  • 3 slices fresh lemon about 1/3 inch thick
  • 5 or more sprigs fresh mint
  • 1 tablespoon fresh ginger root finely grated, plus optional thin slices for serving
  • 5 cups filtered water

Equipment

  • Large covered glass pitcher, at least 2 quarts
  • Knife and cutting board
  • Fine rasp grater
  • Tablespoon measure
  • Fine stainless strainer, optional

Method

  1. Peel and slice the measured cucumber. Cut the measured fresh lemon into rounds about 1/3 inch thick. Rinse the measured mint sprigs, and finely grate the measured fresh ginger.
  2. Place all of the measured peeled cucumber slices, lemon rounds, mint sprigs and grated ginger in a large clean glass pitcher. Do not muddle or crush them.

  3. Pour in the measured filtered water. Stir once so the grated ginger disperses instead of remaining clumped at the bottom, then cover the pitcher.
  4. Refrigerate the covered pitcher for 12 to 24 hours. The water may become pale yellow-green, the ginger should remain distributed, and the original mint may darken and soften.

  5. Stir before pouring. Serve cool or let each glass come toward room temperature to personal preference. Replace the darkened mint or add fresh cucumber, lemon, mint or thin ginger slices at serving time only if desired.

Notes

Full GAPS: This complete raw-cucumber pitcher is for Full GAPS, not the Introduction Diet. It contains no sweetener, commercial flavoring, supplement or electrolyte powder.
Storage: At 24 hours, strain if desired and refrigerate for up to 3 more days, for no more than 4 days total from assembly.
Scaling: The 2× control doubles the exact formula to 12 servings. Use a covered vessel large enough for 10 cups water and the doubled produce.
