Method
- Start with cooked chicken breasts, boiled eggs and cooked bacon. If preparing them now, cook the chicken breasts to 165°F at the thickest point, boil eggs until the yolks are set, and cook the bacon until crisp. Let everything cool, then cube the chicken, peel and halve the eggs, and crumble the bacon.
- Wash and dry the romaine hearts. Chop them into fork-size pieces and divide among four side-salad plates or arrange on a large platter.
- Cube the avocados, halve the cherry tomatoes, and slice the olives. Keep the toppings separate until you are ready to arrange the salad.
- Arrange the chicken, eggs, bacon, avocado, tomatoes and olives in distinct rows over the romaine.
- Serve with the linked Avocado Green Goddess Dressing, adding just enough to lightly coat the salad. Keep any portion being saved for later undressed.
Notes
Makes 4 side salads or 2 meal-size salads. Prep time is about 15 minutes; the listed 30-minute cook time covers cooking the chicken, eggs and bacon when they are not already prepared.
Use only properly prepared uncured, sugar-free, nitrate-free, additive-free bacon with no liquid smoke or other non-GAPS ingredients.
The separately measured avocado Green Goddess dressing is linked as an ingredient. Add it to taste just before serving and keep leftover salad undressed.
