Cuisine: American

Ingredients

  • 3 cups homemade additive-free coconut milk
  • 3/4 cup raw honey
  • 1/2 cup pure organic cocoa powder not Dutch-process
  • 1/2 cup boiling water
  • 1 tablespoon homemade Full GAPS vanilla extract

Equipment

  • Small heat-safe glass bowl
  • Stainless-steel whisk
  • Blender with a glass vessel and stainless-steel blade
  • Flexible spatula
  • Ice-cream maker prepared according to its manufacturer's directions
  • Covered glass freezer container

Method

  1. Put the cocoa powder in a small heat-safe glass bowl. Pour the boiling water over it and whisk until smooth with no dry cocoa pockets.
Smooth cocoa and boiling-water bloom cooling in a supported glass bowl beside a resting whisk
  2. Let the cocoa mixture cool for 15 minutes, until it is no longer steaming.
  3. Add the homemade coconut milk, cooled cocoa mixture, raw honey, and homemade vanilla to a blender. Blend until smooth and evenly dark, scraping down the sides if needed.
Smooth blended chocolate coconut-milk ice-cream base resting in a stainless-steel bowl
  4. Churn in a prepared ice-cream maker according to its manufacturer's instructions. Stop when soft ridges hold, then divide into four servings.

Notes

Later Full GAPS only after digestive symptoms are gone and a smaller amount of pure organic cocoa has already been tolerated. Use completed homemade additive-free coconut milk and qualifying homemade vanilla. Cool the cocoa bloom for the full 15 minutes before blending.
Serve when churned for a softer texture or freeze in a covered glass container for a firmer scoop. The source nutrition belongs to a different sweetener branch, so nutrition is intentionally omitted here.
