- Measure the finished crisp hazelnuts, then chop them coarsely. Juice the listed portion of fresh lemon. Set both aside. Omit only the nuts if you are making the nut-free option.
- Put the trimmed whole Brussels sprouts in a medium pot and add water to cover. Add half the listed salt. Bring to a boil, lower to a simmer and cook for eight minutes.
- Drain thoroughly in a colander. Check a larger sprout with a fork; the center should be tender. If it is still firm, return the sprouts to simmer until tender, then drain again. Coarsely chop the drained sprouts on a cutting board.
- Melt the measured ghee in a large sauté pan over medium-high heat. Add the chopped sprouts and the remaining half of the listed salt. Cook, stirring occasionally, until the pieces begin turning golden brown.
- Remove the pan from the heat. Add the fresh lemon juice and toss the sprouts, then sprinkle the chopped prepared hazelnuts over them if using.
- Transfer to a serving dish and serve while the sprouts are warm and the topping is crisp.
Notes
Prepared hazelnuts: Start with properly soaked, sprouted or fermented nuts that have been drained and dried completely. The linked hazelnut-flour preparation explains soaking and drying: stop before grinding. Measure the listed volume of whole dried nuts and then coarsely chop. Do not use flour or damp nuts. Nut preparation and finished ghee are made beforehand and are not included in this vegetable dish's timing.
Divide the salt: Use half the listed salt in the simmering water and the remaining half in the sauté pan. At the base batch the total is one teaspoon, divided into two half-teaspoon portions. At 2× the total becomes two teaspoons, one teaspoon for each stage. Do not use the full total in both places.
Method and timing: Simmer whole trimmed sprouts for eight minutes, then drain and check a larger sprout for a tender center. If still firm, simmer until tender and drain again. Chop coarsely and brown in the measured ghee over medium-high heat with occasional stirring. Watch for golden patches on the cut surfaces rather than relying on a fixed sauté time. Take the pan off the heat before adding fresh lemon and the prepared nuts. The base plan is five minutes preparation plus thirty minutes cooking, thirty-five total; water heating and equipment can change actual timing.
Scaling: This recipe serves six as a side. A doubled batch serves twelve. Double all listed ingredient amounts, divide the doubled salt equally between its two stages and use suitably larger equipment or cook two batches if the sauté pan would be crowded. The cooking time does not automatically double.
Full GAPS: Use after all included foods are introduced and tolerated; not during Intro. Nuts wait until diarrhea and abdominal pain have settled. Nut baking comes before whole nuts; use this crisp chopped topping after that preparation and introduction sequence. Ghee is dairy-derived and requires its own established introduction. Do not replace the hot skillet fat with cold-pressed olive oil.
Nut-free option: Omit the hazelnuts completely without adding another topping. Keep the other amounts and method unchanged. Use clean suitable equipment. Ghee remains dairy-derived, and this omission does not establish an earlier GAPS stage.
Storage: Refrigerate promptly in shallow covered containers at 40°F (4°C) or below; use within three to four days. Refrigerate within two hours, or one hour above 90°F (32°C). Keep prepared nuts reserved for later portions dry and separate. Reheat sprouts in a pan to 165°F (74°C) throughout and add reserved nuts afterward.
