Full GAPS Blueberry Lemon Gelatin Cups

Two small, smooth blueberry lemon gelatin cups made with cooked berries, plain grass-fed gelatin and raw honey for Full GAPS.
Prep Time 1 hour 5 minutes
Cook Time 8 minutes
Total Time 1 hour 13 minutes
Servings: 2 small servings
Course: Dessert, Snack
Cuisine: GAPS

Ingredients

  • 1 cup filtered water
  • 1 cup fresh blueberries rinsed
  • 1 tbsp plain grass-fed beef gelatin unflavored and additive-free
  • 2 tbsp fresh lemon juice
  • 1-2 tbsp raw honey to taste; source-measured range

Equipment

  • 1 Le Creuset Signature Round Saucepan, Artichaut, 1.75 quart Small batch saucepan for softening berries and dissolving gelatin.
  • 1 Fine-mesh strainer Strains the cooked blueberry skins from the juice.
  • 1 Heat-safe bowl Catches the strained blueberry liquid.
  • 2 Small heat-safe cups Portion the gelatin into two servings.
  • 1 Whisk Dissolves gelatin smoothly in the warm juice.

Method

  1. Add the filtered water and blueberries to a small saucepan.
  2. Set the pan over medium heat. Stir once or twice and cook until most berries split and press soft under the back of a spoon.
  3. Pour the warm berries and liquid through a fine-mesh strainer set over a heat-safe bowl. Press gently to collect the juice; leave the skins and most pulp behind.
  4. Return the strained blueberry liquid to the saucepan. Sprinkle in the gelatin while whisking, then warm gently until the liquid looks smooth with no visible grains. Do not boil.
  5. Remove the pan from the heat. Stir in the lemon juice and 1 tablespoon raw honey; taste and add up to 1 more tablespoon if desired. Stir until no honey streaks remain.
  6. Pour into two small heat-safe cups. Cover and refrigerate for about 1 hour, until the top is set and the center wobbles gently as one piece. Keep chilled until serving.

Notes

Makes two small servings. Prep time includes the one-hour refrigerator set; cook time is an estimate for softening berries and dissolving gelatin.
Full GAPS dessert made with cooked, strained blueberries. The 2020 Gut and Physiology Syndrome says to avoid fruit when diarrhea or abdominal pain is present; introduce cooked fruit as diarrhea settles and raw fruit when stool is consistently normal.
Use the measured raw-honey branch, 1–2 tablespoons to taste; stevia is omitted.
Store covered in the refrigerator between servings.
