Method
- Pour the scaled quarter-cup warming water into a small stainless saucepan. Sprinkle the scaled gelatin evenly over the surface and leave it undisturbed for 1 minute, until damp and wrinkled rather than dusty.
- Whisk in the scaled cocoa until no dry clumps remain. Warm over medium heat for 1 to 2 minutes, until the shallow mixture is smooth and steaming without simmering or bubbling.

- Remove the saucepan from the heat and cool at room temperature for about 15 minutes, until no longer hot or steaming. Stir in the scaled raw honey until no amber ribbon remains.
- In a clear glass, stir the scaled fresh cream with the separate scaled cold water until evenly pale and fluid. Add the cooled cocoa-honey concentrate and stir from the bottom until the drink is uniformly light chocolate brown.

- Drink now or refrigerate for about 20 minutes for a colder glass. For the same-ingredient soft-pudding option, cover and refrigerate for 2 to 3 hours.
Notes
GAPS placement: Later Full GAPS after fresh cream has been introduced and occasional pure organic cocoa fits after digestive symptoms resolve.
Two water measures: The displayed quarter cup is heated with cocoa and gelatin. The separate displayed one-third cup stays cold and dilutes the fresh cream.
Honey: Add raw honey after the cocoa-gelatin water has cooled and stopped steaming.
Pudding: A 2-to-3-hour chill turns this same measured drink into a soft set without creating another recipe.
