Servings: 8 small pops
Course: Dessert, Snack
Cuisine: American, GAPS

Ingredients

  • 3/4 cup freshly pressed Concord grape juice not bottled, canned, shelf-stable, reconstituted, concentrated, or sweetened
  • up to 1 tablespoon raw honey optional, only if needed

Equipment

  • Grape press or juicer
  • Glass liquid measuring cup
  • Stainless-steel or wooden spoon
  • Enough small stainless-steel pop molds with rack for the scaled batch
  • One wooden stick for each mold
  • Shallow ceramic bowl for exterior warm-water release

Method

  1. Measure the scaled quantity of freshly pressed Concord grape juice shown in the ingredient list into one glass liquid measuring cup.
Three-quarter cup freshly pressed Concord grape juice in one glass measuring cup
  2. If using raw honey, add the scaled amount shown in the ingredient list. Stir briefly with a stainless-steel or wooden spoon until no dense honey ribbon remains on the bottom of the cup.
  3. Divide the mixture among the number of small stainless-steel pop molds required for the scaled batch, keep them upright in their rack, and fit one wooden stick in each mold.
  4. Freeze on a level surface for 4 to 6 hours, until the centers are firm and each pop stays attached to its stick as the mold releases.
  5. If a pop does not release easily, briefly hold only the outside of that mold in a warm water bath. Remove it as soon as the pop loosens, before the surface melts.
