Method
- Put the fresh ground beef or turkey in a mixing bowl. Add the sage, crushed red pepper, and sea salt. Mix until the seasonings are evenly spread through the meat, without packing it tightly.
- For crumbles, leave the mixture loose. For patties, divide into portions and press each one gently into a flat round.
- Heat a skillet over medium heat. Add the sausage in a single layer. If the pan is small, cook in batches so the meat browns instead of steaming.
- For crumbles, break the meat apart with a sturdy spatula as it browns. For patties, turn when the underside is browned and releases from the skillet. Cook through: ground beef to 160°F and ground turkey to 165°F.
- For a frittata, measure one cup of the cooked crumbles. Keep any extra for another breakfast or chill for later.
Notes
One batch starts with one pound of raw ground beef or turkey. Adjust the sage and crushed red pepper within their listed ranges to suit your taste. Crumbles usually cook faster than patties; check the center of the thickest patty. For the frittata, measure one cup of cooked crumbles.
