Prep Time 15 minutes
Minimum Fermentation 3 days
Total Time 3 days 15 minutes
Servings: 20 1/4-cup servings
Course: Condiment, Side Dish
Cuisine: American, Fermented, GAPS

Ingredients

  • 5 cups fresh cranberries rinsed and drained
  • 1 cup filtered water
  • 1/2 cup additive-free dried figs stems removed
  • 1/2 cup additive-free raisins
  • 1/2 cup raw honey
  • 1/4 cup completed homemade vegetable-ferment brine or homemade cultured whey choose one; use whey drained from 24-hour GAPS yogurt or kefir
  • 1 teaspoon natural mineral salt
  • 1/2 teaspoon ground cinnamon
  • 1 fresh orange juiced, plus 2 teaspoons finely grated zest
  • 1 fresh lemon juiced, plus 1 teaspoon finely grated zest
  • 1/8 teaspoon ground cloves

Equipment

  • Food processor
  • Large glass or ceramic mixing bowl
  • Wooden or stainless-steel spoon
  • Microplane or fine zester and citrus juicer
  • Wide-mouth glass fermentation jar or jars
  • Glass fermentation weight
  • Airlock or self-venting pressure-aware closure

Method

  1. Put the cranberries in a food processor. Pulse repeatedly until they are evenly diced and minced, with no whole berries left and no puree forming. Transfer them to a large glass or ceramic bowl.

  2. Add the filtered water, figs, raisins, raw honey, mineral salt, cinnamon, orange juice and zest, lemon juice and zest, and cloves to the processor. Pulse until the dried fruit is chopped small and the mixture is thick but still textured, not smooth.
  3. Scrape the fig-citrus mixture into the bowl with the minced cranberries. Stir in exactly 1/4 cup of either completed homemade vegetable-ferment brine or homemade cultured whey until the color and moisture are even throughout.
  4. Pack the sauce firmly into one or more clean wide-mouth fermentation jars. Leave about 2 inches of headspace. Press out air pockets, place a glass fermentation weight over the fruit, and make sure a thin layer of liquid sits above the weight with every solid submerged. Wipe the rim clean and fit an airlock or self-venting pressure-aware closure.

  5. Keep the closed jar at room temperature out of direct sunlight for 3 to 5 days. Do not routinely open or burp an airlocked jar. Look through the glass for slight bubbling and an evenly moistened ruby mixture; use the fermentation window rather than a fixed clock alone.
  6. At the chosen endpoint within the 3-to-5-day window, remove the airlock once, check for a clean bright-tart fruit aroma and pleasantly tart flavor, replace it with a plain storage lid, and refrigerate. Keep chilled and use within 1 month.

Notes

Full GAPS: Use fresh cranberries, additive-free dried fruit, raw honey and exactly one completed homemade starter. This is not an Introduction Diet or No-Plant GAPS recipe.
Starter: Choose 1/4 cup completed homemade vegetable-ferment brine or 1/4 cup homemade cultured whey drained from 24-hour GAPS yogurt or kefir. Do not combine them.
Fermentation: The 3-day custom time is the minimum. Use the 3-to-5-day fermentation window, keep every solid submerged in a closed pressure-aware vessel, and refrigerate when the sauce is pleasantly tart.
Scaling: The 2x control doubles the batch to about 10 cups and 40 quarter-cup servings. Divide it between correctly sized jars so every jar retains liquid coverage, a fitted weight and about 2 inches of headspace.
Storage: Refrigerate covered for up to 1 month.
