Fermented Cashew Faux Sour Cream for Full GAPS

A thick dairy-free cashew sour cream cultured for 18 hours in the Luvele after a 7-hour mineral-salt soak and smooth Ninja BN801 blend.
Soak And Culture 1 day 1 hour
Total Time 1 day 1 hour
Servings: 3 cups
Course: Side Dish
Cuisine: American, GAPS

Ingredients

  • 2 cups raw whole cashews fresh, organic, and unroasted
  • 1 tsp mineral salt for the soaking water
  • filtered water enough to cover cashews during soaking
  • 3 small dates pitted
  • 1 1/2 cups filtered water divided
  • 1 tbsp plain unflavored bovine gelatin
  • 1/8 tsp live dairy-free yogurt starter with a complete GAPS-compatible ingredient list

Equipment

  • Large glass soaking bowl
  • Fine stainless-steel strainer
  • Small Le Creuset stainless-steel saucepan
  • Ninja Professional Plus Kitchen System BN801 with 72-ounce pitcher
  • Luvele Pure Plus LPPYM300WUSA with 2-liter glass container
  • Tablespoon and teaspoon measures
  • Small glass bowl and silicone spatula

Method

  1. Cover the raw cashews with filtered water, stir in 1 teaspoon mineral salt, and soak for 7 hours.

  2. Drain and rinse the cashews thoroughly until the runoff is clear.
  3. Bring 1/4 cup of the measured water just to a boil in the Le Creuset stainless saucepan. Remove from the heat and stir in 1 tablespoon gelatin until no granules remain.
  4. Put the rinsed cashews, 3 pitted dates, dissolved gelatin mixture, and remaining 1 1/4 cups filtered water into the Ninja BN801 72-ounce pitcher. Blend until completely smooth, stopping the motor before scraping.
  5. Remove 1 tablespoon of the smooth cashew cream to a small glass bowl. Mix the 1/8 teaspoon live dairy-free starter into that portion thoroughly, then stir it evenly back into the full batch.
  6. Transfer the cream to the Luvele Pure Plus 2-liter glass container. Set the machine to the temperature required by the chosen live starter and culture for 18 hours.

  7. When the cream smells clean and tangy and remains thick and uniform, cover and refrigerate promptly. Chill before serving; the texture firms further as it cools.
