Easy Sirloin Tip Roast Beef for Full GAPS

Full GAPS sirloin-tip roast browned in one natural cooking fat, roasted at 325°F to a 145°F center and rested for 15 minutes. One three-pound roast serves six. Choose tallow or duck fat for the option without dairy-derived ghee.

Total Time 2 hours 30 minutes
Servings: 6 servings
Course: Dinner, Full GAPS

Ingredients

  • 1 sirloin tip roast fresh and plain, 3 pounds per roast; keep the same individual roast size at 2×
  • natural mineral salt to taste
  • freshly ground black pepper to taste
  • 2 tablespoons rendered tallow, rendered duck fat, or homemade ghee choose one fat; measure the finished fat; the linked recipe is for the ghee option, which is dairy-derived and needs to be introduced and tolerated

Equipment

  • Heavy oven-safe cast-iron or stainless-steel skillet
  • Tongs
  • Food thermometer
  • Dry oven mitts
  • Clean wooden carving board and sharp carving knife
  • Parchment and foil
  • Measuring spoon

Method

  1. Heat the oven to 325°F with a rack in the middle. Take the roast from the refrigerator, pat its surface dry and season every side with mineral salt and freshly ground black pepper.
  2. Put the heavy oven-safe skillet over medium-high heat for two minutes. Add the measured cooking fat and swirl the pan carefully to coat its base.
  3. Set the roast in the pan with tongs. Give each side about two to three minutes of contact, turning as the surface becomes golden brown. Turn the ends against the pan as well. Keep watching the crust while you work.
  4. Move the skillet to the middle rack using dry oven mitts. Roast until a food thermometer reads at least 145°F (63°C) in the center of the thickest part. Check more than one spot on an uneven roast, keeping the probe away from the pan and large seams of fat. Oven time is approximate; allow roughly 1½–1¾ hours for a three-pound roast and start checking earlier.
  5. Move the roast to a clean carving board and loosely cover it with parchment and foil. Leave it for 15 minutes before slicing. The skillet handle will remain hot after it leaves the oven.
  6. Look for the lines of muscle in the meat and cut thin slices across those lines. Serve with the collected juices and cooking fat.

Notes

Cooking fat: Choose one of the three listed fats. The amount is the total cooking fat, not an amount of each. The ingredient link explains homemade ghee; measure finished strained ghee, not butter. Ghee is dairy-derived. Choose rendered tallow or duck fat when avoiding dairy-derived ingredients.
Oven and doneness: Use 325°F (163°C). Check the thickest center for at least 145°F (63°C) before taking the roast from the oven. Check more than one spot on an uneven roast. Color and a fixed timer do not replace the thermometer. Keep the full fifteen-minute rest before slicing thinly across the grain. The skillet handle stays hot.
Timing: Allow about fifteen minutes preparation, two hours cooking including the skillet work, and fifteen minutes resting, about two and a half hours overall. A three-pound round-type roast may need roughly one and a half to one and three-quarter hours in the oven; start checking earlier. Treat this as a planning allowance and cook until the center reaches the stated temperature even if your roast takes longer.
Scaling: At 1× use one three-pound roast and two tablespoons fat. At 2× use two three-pound roasts and four tablespoons fat, divided between them. Do not silently substitute one six-pound roast. Use enough pan room or two oven-safe pans, brown each roast, and check each center separately. Twelve servings do not mean the cooking time automatically doubles. Salt and pepper stay to taste.
Full GAPS: Use after the ingredients and roasted-meat preparation are introduced and tolerated. This is not an early Intro meat-stock method. Keep the beef's natural fat covering and serve its cooking fat and juices; keep natural fat as part of the meal. Tallow, duck fat and ghee are the hot-pan choices, not cold-pressed olive oil. Ghee needs its own dairy introduction. The recipe is egg-free and nut-free; the option without dairy-derived ingredients uses tallow or duck fat.
Storage: Refrigerate promptly in shallow covered containers at 40°F (4°C) or below, within two hours or one hour above 90°F (32°C). Use within three to four days. Freeze sealed portions at 0°F (-18°C) or below for up to three months for quality. Thaw in the refrigerator. Reheat on the stove or in a conventional oven to 165°F (74°C) throughout.
