Servings: 4 servings
Course: Condiment, Side Dish
Cuisine: American, GAPS

Ingredients

  • 1 large sweet onion use 2 small at 1x or 4 small at 2x; halved and thinly sliced
  • 4 teaspoons extra-virgin olive oil raw and unheated; at 1x, equivalent to 1 tablespoon plus 1 teaspoon
  • 4 teaspoons raw apple cider vinegar at 1x, equivalent to 1 tablespoon plus 1 teaspoon
  • 0.5 teaspoon dried dill weed plain and additive-free
  • 2 generous pinches mineral salt

Equipment

  • Sturdy cutting board
  • Sharp chef's knife
  • Medium glass mixing or serving bowl
  • Measuring teaspoon
  • Silicone spatula or serving spoon
  • Fitted lid or reusable cover

Method

  1. Peel and halve the sweet onion. Set each half flat-side down and slice into thin, even half-moons that bend but still hold their shape.

  2. Separate any joined onion layers and place all the slices in a medium glass bowl.
  3. Add the raw olive oil, apple cider vinegar, dried dill, and mineral salt. Toss until every slice has a light sheen and the dill is evenly distributed; the onions should be coated, not submerged.

  4. Cover and chill for at least 20 minutes, until the edges look slightly more translucent and the onion aroma is milder while the centers remain crisp.
  5. Turn the onions through the dressing once more and serve chilled with fish, eggs, salads, or roasted vegetables.

Notes

GAPS placement: Full GAPS.
Raw oil: Keep the extra-virgin olive oil unheated.
Formula: Four teaspoons equals the source's one tablespoon plus one teaspoon and scales cleanly in WPRM.
Method: This is a quick chilled marinade, not a ferment.
Storage: The source says to chill until serving and does not assign a multi-day storage limit.
