Creamy dairy-free spinach and cashew dip with crisp bacon for Full GAPS

Dairy-Free Spinach Dip With Cashews and Bacon for Full GAPS

A smooth dairy-free spinach dip made with soaked cashews, cooked spinach and crisp salt-only bacon. Coconut oil keeps the recipe dairy-free. Full GAPS after the ingredients are introduced and tolerated.
Servings: 1 batch
Course: Appetizer
Cuisine: American

Ingredients

  • 1 cup plain raw cashews measured before soaking; soak 1-3 hours, drain and rinse
  • 2 teaspoons coconut oil or fat from bacon made with salt only
  • 12 ounces fresh spinach washed; keep cooking juices
  • 1/2 teaspoon salt
  • 3 slices bacon made with salt only without added sugar or other additives; cook crisp and dice

Equipment

  • 1 Bowl and strainer
  • 1 Le Creuset Artichaut skillet
  • 1 Oven-safe tray
  • 1 Ninja BN801 blender
  • 1 Spatula

Method

  1. Cover the cashews with filtered water and soak for 1-3 hours. Drain, rinse well and let excess water drain away. Discard the soaking water.

  2. Heat the oven to 400°F. Cook the bacon on an oven-safe tray until browned and crisp. Set aside and dice once cool enough to handle.
  3. Melt the coconut oil in a skillet over medium heat. Add the spinach, working in handfuls if needed, and turn until all the leaves are limp and dark green. Keep all of the cooking juices.

  4. Let the spinach and its juices cool before blending in the Ninja BN801. Put the drained cashews, cooled spinach and cooking juices into the blender. Blend until smooth, stopping the machine before scraping if needed. The puree should have no hard cashew pieces or long spinach leaves.
  5. Transfer to a bowl. Stir in the salt and diced crisp bacon. Serve with vegetables you tolerate on Full GAPS.

Notes

Plan 1-3 hours for soaking, plus cooking and cooling. The serving control scales whole batches.
Cashews should not be soaked longer than 6 hours. Use the full amount of spinach cooking juices, but discard the cashew soaking water. Do not blend hot ingredients in the Ninja.
