Ingredients

Crispy Pecan-Date Crust
  • 1 1/2 cups crispy pecans properly prepared
  • 16 additive-free dates about 1/2 cup; peeled and pitted; soak overnight in water only if firm
Blueberry-Date Compote
  • 24 ounces blueberries source used frozen
  • 16 additive-free dates about 1/2 cup; peeled and pitted
  • 1 cup filtered water
Cashew-Yogurt Layers
  • 4 cups 24-hour cashew yogurt make and chill the linked recipe first
  • 1/4 cup fresh lemon juice
  • 1/2 cup natural organic coconut oil melted and cooled to room temperature

Equipment

  • 1 9-inch springform pan
  • 1 Parchment paper cut to fit the pan bottom
  • 1 Food processor for the crust
  • 1 Le Creuset stainless-steel saucepan medium
  • 1 Ninja Professional Plus Kitchen System BN801 pitcher use only after the compote has cooled completely
  • 1 Large mixing bowl
  • 1 Whisk or hand mixer
  • 1 Flexible spatula
  • 1 Sharp slicing knife

Method

  1. Line the bottom of a 9-inch springform pan with parchment. Process the crispy pecans and 16 dates until the mixture holds together when pressed. Press evenly over the parchment, cover, and refrigerate.

  2. If the blueberries are frozen, rinse them briefly with warm water and drain. Combine the blueberries, remaining 16 dates, and filtered water in a medium stainless-steel saucepan. Bring to a boil, then simmer about 20 minutes, stirring, until thick and jam-like and a spoon trail across the pan does not immediately close.

  3. Let the compote cool completely before transferring it to the Ninja BN801 pitcher. Blend until smooth, stopping to scrape the pitcher if needed.
  4. Whisk the chilled 24-hour cashew yogurt with the lemon juice. Drizzle in the melted room-temperature coconut oil while mixing continuously. Scrape the bowl and continue until smooth with no clear oil beads or streaks.
  5. Spread exactly 2 1/2 cups of the plain cashew-yogurt mixture over the cold crust. Cover and freeze for 2 hours or until solid and no longer rippling when the pan is moved.
  6. Whisk 3 tablespoons of the cooled blueberry compote into the remaining plain cashew-yogurt mixture. Cover and refrigerate while the first layer freezes.
  7. Spread all remaining blueberry compote over the solid white layer, then spread the purple cashew-yogurt mixture evenly on top.
  8. Cover and freeze for at least 4 additional hours, until the top is firm across the whole pan.
  9. Release the springform ring. Thaw at room temperature about 1 hour before slicing; allow up to 2 hours if frozen solid. Slice into 16 servings. Serve within the following hour or refrigerate.

Notes

Full GAPS: Use after fresh cashews, properly prepared pecans, dates, berries, coconut oil, lemon, and fermented foods are established. This is not an Introduction Diet recipe.
Cashew yogurt: Make and chill the linked 24-hour cashew-yogurt recipe first.
Optional toppings: Blueberry-honey sauce and canned-coconut-cream topping are omitted so this card contains one complete cheesecake formula.
Serving: Start checking after 1 hour at room temperature. A solidly frozen cake may need up to 2 hours. Serve sliced cake within the following hour or refrigerate.
Scaling: The 2× control doubles every measured ingredient; use two 9-inch springform pans rather than overfilling one.
