Eight crispy coconut salmon patties with egg for Full GAPS on a cream platter in the WFLI kitchen

Crispy Coconut Salmon Patties With Egg for Full GAPS

Small Full GAPS salmon patties made with wild salmon, eggs, and additive-free shredded coconut. A short rest helps the coconut bind the mixture before the patties fry until firm at the edges and golden underneath.

Ingredients

  • 3 whole 5-ounce cans wild salmon drained
  • 2 whole eggs
  • 1/4 cup additive-free unsweetened shredded coconut optional
  • 2-3 tablespoons ghee or coconut oil for frying

Equipment

  • 1 Medium mixing bowl
  • 1 Dinner fork
  • 1 Le Creuset Signature 10.25-inch skillet
  • 1 Thin stainless-steel spatula

Method

  1. Open the cans and drain the salmon by pressing each cut lid firmly against the fish while turning the can upside down over the sink.
  2. Put the salmon, eggs, and shredded coconut in the mixing bowl. Mix with the fork until the egg is thoroughly distributed. Keep the salmon visibly flaky, but make the mixture uniform.

  3. Let the mixture rest while you heat the skillet over medium heat. The rest gives the shredded coconut time to absorb moisture and help the patties hold together.
  4. Add 1 tablespoon of the ghee or coconut oil to the hot skillet and let it melt. Shape the salmon mixture into small slider-size or mini-burger-size patties and place them in the skillet without crowding.
  5. Cook the first side for about 5 minutes, until the edges look firm, the uncooked top begins to lose its wet shine, and the underside is starting to brown.

  6. Slide a thin metal spatula fully underneath each patty and flip carefully.
  7. Cook the second side for about 3 minutes, then serve. Add more of the measured fat before each new batch as needed.

Notes

The shredded coconut is optional. If you leave it out, use 1 egg instead of 2. Use additive-free shredded coconut on Full GAPS.
