Cuisine: American

Ingredients

  • 1 cup finished homemade avocado-oil mayonnaise make the plain mayonnaise first
  • 1 lime for zest finely grated zest only; take from the fruits listed for juice
  • 2 limes for the initial juice juice only, seeds removed; includes the zested fruit
  • 3 additional limes for thinning juice only, seeds removed
  • 3 cloves garlic crushed
  • 1/2 teaspoon natural sea salt
  • 1/8 teaspoon pure cayenne pepper
  • 3/4 teaspoon pure smoked paprika without sugar, starch or other additives

Equipment

  • Ninja BN801 food processor bowl
  • Measuring cups and spoons
  • Fine grater or zester
  • Citrus juicer
  • Two small juice bowls
  • Spatula
  • Clean covered jar or container

Method

  1. Have fresh homemade avocado-oil mayonnaise ready. It should be creamy with no separate oil. Measure the finished mayonnaise into the Ninja BN801 food-processor bowl. The five-minute timing assumes the base is already made and ingredients are prepared.
  2. Wash and dry the limes. Finely grate the zest, avoiding white pith. Juice the initial limes and the additional thinning limes into separate bowls and remove seeds. The zested fruit is part of the juice quantity, not an extra lime.
  3. Add the lime zest, initial lime-juice portion, crushed garlic, salt, cayenne and smoked paprika to the mayonnaise. Keep the additional thinning juice separate. Secure the processor bowl and lid according to the appliance guide.
  4. Puree the initial mixture until evenly combined. Stop before opening or scraping down the sides. If dry spice or garlic remains on the bowl wall, scrape it down with the machine stopped, secure the lid and mix again. Look for an even creamy color with tiny zest flecks.
  5. With the machine stopped, add the juice from the additional limes. Secure the lid and mix until uniform and pourable. The dressing should flow more readily than the initial mixture, without separate clear-juice streaks.
  6. Transfer to a clean covered container and refrigerate. Serve over a salad after raw vegetables are introduced, or add to cooked food at serving time. Keep the oil unheated. Use within three to four days from fresh-base preparation; flavoring older mayonnaise does not restart its storage time.

Notes

Start with finished homemade avocado-oil mayonnaise. Make that base before measuring the cup for this recipe.
Five limes total at the original quantity: zest one of them, use juice from two in the initial mixture and juice from the additional three to thin it. The zest is from fruit already counted for juice. Each amount scales separately.
This is the five-lime dressing. The separate two-lime mayonnaise is the thicker condiment. Do not average their lime quantities.
Full GAPS after ingredients are introduced. Contains egg from the mayonnaise, with no dairy ingredients. Keep the avocado oil unheated. Raw salad vegetables need their own food introduction.
Sixteen servings; finished volume varies with lime juiciness. Five-minute prep/total assumes finished mayonnaise and prepared ingredients. Store covered in the refrigerator and use within three to four days from fresh-base preparation. An older base does not get a new storage period when seasoned.
