Course: Side Dish
Cuisine: GAPS

Ingredients

Creamy Cabbage Salad
  • 1/2 head cabbage medium; green or purple, or a mix; thinly sliced
  • 1/4 cup mayonnaise homemade Full GAPS mayonnaise
  • 1/2 cup yogurt full-fat, plain homemade 24-hour yogurt
  • 1/2 tsp sea salt fine sea salt
  • 1 tsp ginger ground
  • 1/2 cup raisins plain, additive-free; not sweetened or starch-coated

Equipment

  • Sharp chef's knife
  • Large mixing bowl
  • Small bowl
  • Measuring cups and spoons
  • Food processor with shredding disc, optional

Method

  1. Remove any tough outer cabbage leaves and the firm core. Slice the cabbage into thin ribbons with a sharp knife or a food processor shredding disc. Place it in a large bowl.
  2. In a small bowl, stir together the homemade mayonnaise, homemade yogurt, sea salt, and ground ginger until the dressing is smooth and evenly seasoned.
  3. Add the raisins to the cabbage. Spoon the dressing over the top and toss from the bottom up until the cabbage looks lightly glossy and evenly coated. Separate any raisins that are clumped together.
  4. Cover the bowl and refrigerate overnight. Before serving, toss once more so the dressing at the bottom coats the cabbage. The shreds should be more flexible, but still have some crunch.

Notes

Full GAPS side salad; not an Introduction Diet recipe. Use plain homemade 24-hour yogurt and homemade mayonnaise. Choose plain raisins without added sugar, starch coating, or preservatives. Refrigerate overnight, covered; enjoy within three to four days.
