Method
- Pour the coconut water into a saucepan away from the heat. Sprinkle the gelatin across the liquid and stir so all the powder is moistened.
- Put the saucepan over medium heat, add the honey and stir for about five minutes until the gelatin and honey dissolve. Keep the heat gentle; a rolling boil is not needed. Check for undissolved powder or lumps before pouring.
- Pour into a room-temperature 8-by-8-inch glass dish. Let the filled dish cool if hot before setting it level in the refrigerator.
- Refrigerate for about two hours, or until the slab is firm enough to cut and the middle holds its shape. Allow longer if still soft.
- Press a stainless steel star cutter straight down through the chilled slab. Lift out the stars gently and save the pieces between the cuts. Keep refrigerated until serving.
Notes
Yield: About ten cut stars, depending on cutter size and spacing, plus usable pieces between the shapes. The formula sets in an 8-inch square dish; it does not use star-shaped molds.
Timing: About five minutes heating plus two hours refrigeration. Collecting fresh coconut water, measuring, cooling the filled glass dish if hot, and cutting the stars are additional preparation. Let full dissolution and a firm slab determine completion.
Coconut water: Use the fresh liquid from whole coconuts, not coconut milk or cream. Measure three cups without diluting it. Coconut yield varies; do not assume a fixed number of coconuts.
Gelatin: Use plain gelling beef gelatin, not collagen peptides. Moisten in the cool liquid before heating and stir until fully dissolved.
GAPS: Full GAPS snack, not an Intro or No-Plant preparation. No dairy, egg or nut ingredient. Honey is included, so this is not labeled keto or sugar-free.
Doubling: Use six cups coconut water, eight tablespoons gelatin and two tablespoons honey. Make two separate batches, each with half those amounts, in two 8-inch square dishes to preserve thickness and allow stirring space. Additional batch work takes additional time.
Serving and storage: Keep covered and refrigerated. Serve the cut stars and the offcuts. Bring out the portion needed and keep the rest cold; these are not shelf-stable candy.
