Ingredients

Coconut Lime Gelatin Cubes
  • 1/2 cup lime juice freshly squeezed
  • 1/2 cup homemade coconut milk stir cream back into milk before measuring
  • 3 Tbsp honey raw
  • 2 Tbsp gelatin plain, grass-fed bovine gelatin; no additives
  • 1 pinch sea salt

Equipment

  • Small Le Creuset enameled saucepan or stainless-steel saucepan
  • Whisk or fork
  • Measuring cups and spoons
  • 6-inch square glass dish
  • Thin knife
  • Spatula
  • Immersion blender, optional

Method

  1. Stir the cream back into the homemade coconut milk, then measure one-half cup into a small bowl or saucepan.
  2. Sprinkle the grass-fed bovine gelatin evenly over the cold coconut milk. Stir gently to moisten the granules and let stand for five minutes until swollen and sponge-like.
  3. Stir in the fresh lime juice, raw honey, and pinch of sea salt.
  4. Warm over low heat, stirring continuously, until the gelatin dissolves and the liquid looks smooth and pourable. Do not boil. If gelatin pockets remain, blend briefly on low with an immersion blender.
  5. Pour into a shallow 6-inch square glass dish. Cover and refrigerate for at least six hours, until the center feels firm and does not ripple when the dish is moved.
  6. Run a thin knife around the edge and cut the set mixture into a four-by-four grid. Lift out sixteen small cubes with a thin spatula or butter knife.

Notes

Full GAPS dessert; not an Introduction Diet recipe. Use fresh lime juice, homemade coconut milk, raw honey and plain grass-fed bovine gelatin. Chill at least six hours, until firm in the center. Keep covered in the refrigerator; use within three to four days.
