Servings: 2 hot pockets
Course: Breakfast, Lunch, Snack
Cuisine: American, GAPS

Ingredients

Coconut Flour Turkey and Gruyere Pockets
  • 2 large eggs
  • 1 1/4 cups aged Gruyere cheese finely grated
  • 1/4 cup aged Parmesan cheese finely grated
  • 4 teaspoons coconut flour level measures
  • 1 tablespoon homemade ghee melted and cooled slightly
  • 1/2 cup aged Gruyere cheese for filling grated and divided
  • 2 thin slices leftover home-cooked roast turkey not deli meat

Equipment

  • Uncoated cast-iron full-size waffle iron
  • Small mixing bowl
  • Sturdy spoon
  • Measuring cups and spoons
  • Stainless-steel sheet pan
  • Unbleached parchment paper
  • Fork or spoon for crimping
  • Offset metal spatula

Method

  1. Heat the oven to 350°F. Line a stainless-steel sheet pan with unbleached parchment and preheat an uncoated cast-iron full-size waffle iron.
  2. Stir the eggs, 1 1/4 cups Gruyere, Parmesan, coconut flour, and melted ghee in a small bowl. The batter should be very thick, cheese-heavy, and free of dry coconut-flour pockets, with no loose egg pooling around the edge.
  3. Spread half the batter into a thick rectangle in the preheated iron. Cook for about 2 minutes, until set and pale golden but still flexible. Transfer to the prepared sheet pan and repeat with the remaining batter.
  4. Put one thin slice roast turkey and 1/4 cup filling Gruyere on one half of each shell, leaving a border. Fold the empty half over the filling and press the edges with a spoon edge or fork tines. A few small cracks are acceptable if the pocket holds its shape.
  5. Bake for 8 to 10 minutes, until the waffle ridges are crisp golden, the edges feel firm, the Gruyere is melted, and the turkey is hot. Rest for a few minutes before cutting.

Notes

Later Full GAPS after whole eggs, coconut flour, ghee, aged Gruyere, and aged Parmesan are individually tolerated; not for the Introduction Diet, dairy-free, or No-Plant variations.
Psyllium husk, baking soda, Dijon mustard, fresh mozzarella, and commercial deli meat are omitted.
Use leftover home-cooked roast turkey and homemade ghee.
Refrigerate wrapped leftovers for up to 3 days. Reheat at 325°F for 10 to 15 minutes.
At 2x, use 4 eggs, 2 1/2 cups shell Gruyere, 1/2 cup Parmesan, 8 teaspoons coconut flour, 2 tablespoons ghee, 1 cup filling Gruyere, and 4 thin turkey slices. Cook shells in separate batches.
