Chocolate Date Panna Cotta for Later Full GAPS

A smooth, chilled cocoa-date dessert made with homemade coconut milk and plain beef gelatin. Makes two servings for occasional Later Full GAPS.
Cook Time 10 minutes
Chill Time 5 hours
Servings: 2 servings
Course: Dessert
Cuisine: GAPS

Ingredients

  • 1 cup homemade coconut milk
  • 2 tablespoons homemade coconut milk
  • 1/2 cup additive-free pitted Medjool dates about 6 to 8 dates, pitted
  • 4 teaspoons pure organic cocoa powder
  • 1 teaspoon grass-fed beef gelatin plain and unflavored

Equipment

  • 1 Le Creuset Signature Round Saucepan, Artichaut, 1.75 quart
  • 1 Ninja BN801 24-ounce single-serve cup and blade assembly
  • 1 Fine-mesh stainless-steel strainer
  • 2 small clear glass dessert dishes

Method

  1. Put 1 cup homemade coconut milk and the pitted dates in a small saucepan. Heat over very low heat for about 10 minutes, stirring once or twice. Keep the milk calm and do not boil. The dates should look plump and yield easily when pressed with a spoon.
  2. Remove the pan from the heat and let the mixture cool until warm and no longer steaming. Blend the dates, milk, and cocoa until evenly dark brown and no date pieces remain. Keep the Ninja cup below its fill line; do not blend hot liquid.
  3. Set a fine-mesh stainless strainer securely over a glass bowl. Pour in the cocoa-date mixture and press gently with the back of a spoon. The smooth puree passes through while tough date-skin flecks remain in the mesh.
  4. Sprinkle the gelatin over the remaining 2 tablespoons coconut milk and leave for 5 minutes until swollen. Warm the strained cocoa mixture over low heat. Whisk in the bloomed gelatin until no grains remain. Do not boil.
  5. Divide between two small glass dishes, cover, and refrigerate for about 5 hours until cold and softly set. The top should stay in place when tilted, with a little give under a spoon.

Notes

Date range is 6–8 pitted dates, about 1/2 packed cup. Cook about 10 minutes; bloom 5 minutes; chill about 5 hours. Prep and total times are not supplied. No stevia branch.
