Method
- Measure the homemade coconut milk and filtered water into a small saucepan. Sprinkle in the gelatin gradually while whisking until the mixture looks evenly cloudy with no dry pockets.
- Set the saucepan over medium heat and stir for about 5 minutes, until the gelatin has dissolved and the liquid looks smooth and pourable. Do not let it boil.
- Whisk in the cocoa gradually until the mixture is an even chocolate brown with no dry flecks. Remove the pan from the heat and stir in the raw honey until no streaks remain.
- Pour into a shallow glass container and smooth the surface with a spatula so the layer is level.
- Refrigerate for about 1 hour, until the center is set and wobbles gently as one piece. If liquid still shifts separately in the middle, chill longer.
- Run a thin spatula or knife around the edge. Cut into 1-inch squares and lift the pieces out with a small spatula. Serve cold and keep the remaining squares covered in the refrigerator.
Notes
Makes 4 servings; the number of one-inch squares depends on the shallow dish and how you cut them. Prep time includes the one-hour refrigerator set.
For Later Full GAPS only, as an occasional cocoa treat after digestive symptoms have disappeared. Not an Introduction Diet recipe.
Use the measured raw-honey sweetener, not stevia. Use homemade full-fat coconut milk and plain gelatin that sets. This is a soft, sliceable square, not the firmer chocolate gummy bear recipe.
Keep the finished squares covered and refrigerated. Return the dish to cold storage after serving.
