Chipotle Lime Mayonnaise for Full GAPS

A smoky lime mayonnaise made with avocado oil, olive oil, coconut oil, eggs, compatible mustard, and pure chipotle.
Servings: 1 batch
Course: Condiment
Cuisine: American, GAPS

Ingredients

  • 1 cup raw cold-pressed avocado oil
  • 1/2 cup gently melted coconut oil cooled until liquid but no longer warm
  • 1/2 cup raw extra-virgin olive oil
  • 2 whole eggs
  • 1 egg yolk
  • 2 tsp compatible prepared Dijon-style or yellow mustard complete label must fit Full GAPS
  • 3 tbsp fresh lime juice more may be added after emulsifying, but it thins the mayonnaise
  • 1/2 tsp mineral salt
  • 1 pinch freshly ground black pepper
  • pure chipotle powder to taste; source example is 1 teaspoon per 1/2 cup finished mayonnaise

Equipment

  • Ninja Professional Plus Kitchen System BN801
  • Exact BN801 food-processor bowl, chopping blade, and lid
  • Measuring cups and spoons
  • Citrus juicer
  • Silicone spatula
  • Small glass bowl
  • Covered glass storage jars

Method

  1. Measure the avocado oil, olive oil, and gently melted coconut oil. Let the coconut oil cool until liquid but no longer warm.

  2. Add the whole eggs, egg yolk, prepared mustard, lime juice, mineral salt, and black pepper to the Ninja BN801 food-processor bowl. Lock the chopping blade and lid in place.
  3. Run the processor on low. Add the three oils in a thin continuous stream through the lid opening, pausing the pour if clear oil begins collecting on top.
  4. Continue processing until the mayonnaise is pale, opaque, and thick enough to hold a soft ridge from a spoon. Stop the machine and scrape the bowl.

  5. For a measured spicy portion, stir 1 teaspoon pure chipotle powder into 1/2 cup finished mayonnaise. Taste and adjust the separated portion.
  6. Transfer the plain and chipotle portions to separate covered glass containers and refrigerate promptly.

Notes

GAPS placement: Full GAPS after every ingredient is introduced and tolerated.
Timing and yield: The source does not state a preparation time, total time, serving count, or exact full-batch chipotle amount; none is invented here.
Equipment: The source formula is preserved and uses the owner-registered Ninja BN801 processor bowl for its manufacturer-supported emulsifying function.
