Ingredients

  • 1 pound pork tenderloin thinly sliced across the grain, 1/4 to 1/3 inch thick
  • 12-16 ounces fresh broccoli cut into small florets
  • 1 cup finished homemade raw-meaty chicken meat stock or beef meat stock choose one
  • 10 ounces cabbage thinly sliced
  • 1 bunch green onions sliced diagonally, whites and green tops separated
  • 4 ounces shiitake mushrooms stems removed and caps sliced
  • 1 carrot optional; cut into matchsticks; included in this card
  • 1/4 cup pure additive-free coconut aminos no soy, grain, added sugar, starch, preservatives or flavor blend
  • 2 tablespoons fresh ginger grated or minced
  • 2 tablespoons lard for the heated skillet
  • 1 tablespoon apple cider vinegar added off heat
  • 1 1/2 teaspoons sea salt use one-third with the vegetables and two-thirds with the pork
  • 1/4 teaspoon white pepper pure single spice

Equipment

  • Medium glass or ceramic mixing bowl
  • Large cast-iron skillet or wok
  • Broad wooden or stainless spatula
  • Cutting board and sharp knife
  • Measuring cups and measuring spoons

Method

  1. Combine the sliced pork, coconut aminos, fresh ginger and white pepper in a medium bowl. Toss until every slice is lightly coated, then marinate while the vegetables are prepared.
  2. Heat a large cast-iron skillet or wok over high heat until hot but not smoking. Add the lard. When it has melted into a thin sheen, add the shiitake caps and stir-fry for 2 minutes, until the edges begin to soften.
  3. Add the cabbage, broccoli, optional carrot, green-onion whites and one-third of the measured sea salt. Stir over high heat for 3 to 4 minutes, until the cabbage bends and glosses but still holds folds and the broccoli remains bright and shaped. Reduce to medium if the pan smokes.

  4. Pour in the measured meat stock. Reduce to medium or medium-low and keep a slow simmer with small steady bubbles for 3 minutes, stirring occasionally. Do not reduce to a thick sauce.
  5. Add the marinated pork and the remaining two-thirds of the sea salt. Stir immediately to separate every slice. Simmer for 3 to 4 minutes, stirring several times, until the pork is opaque with no raw gloss and the light sauce begins to cling.

  6. Remove the skillet from the heat. Add the apple cider vinegar and stir it through the hot food so the sour flavor remains distinct.
  7. Scatter the reserved green-onion tops over the stir fry and serve immediately while the vegetables still hold their shape.

Notes

Full GAPS: Use finished homemade raw-meaty meat stock, pure additive-free coconut aminos and lard. Do not use bone broth, commercial broth, soy sauce, tamari, heated avocado oil or commercial sauce.
No tapioca: Tapioca is omitted for this Full GAPS version. Do not add another thickener.
Carrot: Carrot is optional; this card and its photos include it.
Scaling: The scaling controls double all measured ingredients. The salt remains divided by proportion: one-third for vegetables and two-thirds for pork.
Storage: Refrigerate promptly in covered glass. Reheat only until the pork is hot, adding a spoonful of finished meat stock only if the pan is dry.
