Chicken Pad Thai With Sesame Almond Sauce for Full GAPS

Full GAPS chicken Pad Thai with roasted thighs, zucchini strands, thin egg ribbons, slivered snap peas and onion, finished with a separately prepared sesame almond sauce. Serves three.
Cook Time 1 hour
Servings: 3 servings
Course: Dinner, Entrée
Cuisine: GAPS, Thai-inspired

Ingredients

  • 3 zucchini julienned; stop at seedy cores
  • 10 ounces sugar snap peas sliced into slivers
  • 1 onion thinly sliced
  • 6 skin-on chicken thighs
  • 3 eggs cook as separate thin pancakes
  • 1 tablespoon coconut oil about this much to begin; plus more as needed
  • homemade ghee for a light drizzle over chicken skins
  • sea salt to taste
  • 1 batch sesame almond butter sauce prepare separately; use the whole batch for the meal

Equipment

  • Baking dish
  • Large skillet
  • Second skillet or griddle
  • Colander
  • Cutting board
  • Knife or pizza cutter
  • Spatula
  • Kitchen thermometer
  • Large mixing bowl

Method

  1. Heat the oven to 400°F. Arrange the thighs skin-side up, drizzle lightly with homemade ghee and sprinkle with salt. Roast about 1 hour, until golden and 165°F in the thickest part away from bone. When cool enough to handle, remove and roll the skins for serving alongside. Pull the meat from the bones.
  2. While the chicken roasts, heat the starting coconut oil in a skillet over medium-high heat. Sauté the snap-pea slivers until bright green and tender; remove. Add oil as needed and cook the onion until translucent; remove. Add oil as needed and sauté the julienned zucchini until soft. Drain the zucchini in a colander so loose cooking liquid does not dilute the sauce.
  3. Beat one egg, pour onto a greased hot skillet or griddle and spread thin. Cook until lightly browned underneath and set enough to flip; flip and cook the other side. Repeat with each remaining egg. Stack the pancakes and cut into ½-inch-wide ribbons.

  4. Combine the drained zucchini, cooked peas and onion, working in batches if the skillet is crowded. Fold in the chicken meat and egg ribbons and warm until hot through. Remove from the heat, divide among the servings, and fold the prepared sauce into the ready-served portions. Use the full sauce batch across the meal. Do not cook further after adding the sauce. Serve the rolled chicken skins alongside.

Notes

Full GAPS: After eggs, prepared nuts and seeds, and the remaining ingredients are introduced. Not Intro, egg-free, nut-free, or No-Plant. Ghee and the whey-prepared almond butter in the linked sauce mean this version is not dairy-free.
Sauce: Make the linked sesame almond butter sauce as its own recipe. Add it to ready-served food with no further cooking because the homemade tahini contains raw olive oil.
Timing: The 60-minute cook time describes the approximate chicken roast. Prepare the vegetables and eggs during that roast; allow extra time for preparation and assembly as needed.
Scaling: Use separate thin egg pancakes even for a larger batch. Keep the oven at 400°F, provide enough oven/pan space and check 165°F chicken doneness rather than multiplying roasting time.
Leftovers: Reserve sauce separately if planning leftovers. Refrigerate cooked chicken, vegetables and eggs promptly, covered. Reheat that portion until hot through, then add its sauce at serving.
