Caramelized Roasted Delicata Squash Slices for Full GAPS

A two-ingredient Full GAPS side with edible-skin delicata squash half-rings, a whole-squash pre-bake, and golden two-sided roasting.
Prep Time 10 minutes
Cook Time 55 minutes
Total Time 1 hour 5 minutes
Servings: 5 servings
Course: Appetizer, Side Dish, Snack
Cuisine: American, GAPS

Ingredients

  • 1-2 whole delicata squash preferably organic; leave skin on
  • 2-4 tablespoons melted ghee, natural non-hydrogenated coconut oil, introduced butter, or rendered animal fat use the upper end when the squash are large

Equipment

  • One or two large uncoated stainless-steel sheet pans
  • Sturdy cutting board
  • Sharp chef's knife
  • Strong metal spoon
  • Thin stainless spatula or tongs
  • Heat-safe trivets
  • Measuring spoons or liquid measure

Method

  1. Preheat the oven to 375°F.
  2. Place the scaled whole delicata squash on an uncoated stainless-steel baking sheet or directly on the oven rack. Bake whole for 25 minutes, until warm and slightly more yielding but not collapsed or fully tender.
  3. Carefully move the hot squash to a sturdy cutting board. Halve each squash lengthwise and scoop out the seeds and stringy center, leaving the skin on.

  4. Place each half cut-side down and cut crosswise into even one-third-inch half-rings.
  5. Pour the scaled melted fat onto one or two uncoated stainless-steel sheet pans. Turn every slice through the fat to coat both faces lightly, then arrange in a true single layer with no overlap.

  6. Roast for 15 to 25 minutes, until the undersides show broad golden-brown patches rather than pale wet surfaces.
  7. Turn every half-ring and roast for another 15 to 20 minutes, watching closely near the end until the second side is golden, the edges are lightly crisp, and the centers are soft.
  8. Remove smaller slices when both sides are browned if larger pieces need more time. Do not let the edges turn black or smell bitter.
  9. Serve warm.

Notes

GAPS placement: Full GAPS.
Fat: Use ghee, natural non-hydrogenated coconut oil, introduced butter, duck fat, or another rendered animal fat. Keep cold-pressed olive and avocado oil unheated.
Thickness: Cut even one-third-inch half-rings so centers soften while both faces brown.
Timing: Watch visual browning cues; total oven time is about 55 to 70 minutes including the pre-bake.
