Total Time 30 minutes
Servings: 1 generous smoothie
Course: Beverage, Breakfast, Snack
Cuisine: American, GAPS

Ingredients

  • 1 pound whole beet scrubbed, unpeeled, and roughly chopped into about 1 1/2-inch pieces
  • 1 cup hot-water homemade coconut milk finished, strained, and chilled; stir before measuring
  • 1 tbsp pure organic cocoa powder not a sweetened cacao drink mix
  • 1 tsp additional pure organic cocoa powder optional; preserves the source's heaping-tablespoon range
  • 1 tbsp raw honey plus more only to taste after blending
  • 1 pinch mineral salt

Equipment

  • Small Le Creuset stainless saucepan
  • Colander or strainer
  • Knife and cutting board
  • Heat-safe glass blender
  • Measuring cups and spoons
  • Large serving glass

Method

  1. Scrub the beet and leave the skin on. Roughly chop it into about 1 1/2-inch pieces, place in a small saucepan, and cover with water. Cook over medium heat for 15 to 25 minutes, until a fork slides through the center without a hard core. Drain and cool.

  2. Chill the cooked beet pieces and the finished homemade coconut milk ahead of time. Stir the coconut milk before measuring if its fat has separated.
  3. Pour the chilled coconut milk into a heat-safe glass blender. Add the cooked beet, cocoa, optional additional cocoa, raw honey, and mineral salt.

  4. Secure the lid and blend until completely smooth, thick but pourable, and even dark burgundy throughout, with no visible beet pieces, cocoa pockets, or pale coconut-milk streaks. Pour into one large glass and serve cold.

Notes

Later Full GAPS: Pure organic cocoa is occasional only after digestive symptoms are gone and cocoa is tolerated.
Cold branch: Chilling time is not included in the 30-minute prep-and-cook total. Cook and chill the beet ahead.
Scaling: The 2x control doubles every numeric ingredient. Check saucepan and blender capacity and work in batches when needed.
Warm adaptation: Keep the measurements unchanged. Heat the coconut milk and cocoa, warm the cooked beet through, then blend with honey and salt.
