Servings: 1 12-ounce mug
Course: Beverage, Snack
Cuisine: American, GAPS

Ingredients

  • 12 fl oz homemade hot-water coconut milk stir before measuring
  • 2 tbsp homemade ghee softened or melted
  • 1 tbsp raw honey plus more only to taste after blending
  • 2 tbsp pure organic cocoa powder not drinking chocolate or a sweetened mix
  • 1 tbsp plain unflavored bovine gelatin base amount
  • 1 tbsp additional plain unflavored bovine gelatin optional; for finer foam and a firmer chilled set

Equipment

  • Small Le Creuset stainless saucepan
  • Heat-safe glass blender
  • Liquid measuring cup and measuring spoons
  • 12-ounce ceramic mug

Method

  1. Heat the homemade coconut milk in a small saucepan over medium-low heat until it is steaming and hot to the touch, but not simmering. The surface should stay calm with no ring of bubbles.

  2. Place the homemade ghee and raw honey in a heat-safe glass blender jar.
  3. Pour the hot coconut milk into the blender. Add the cocoa and 1 tablespoon gelatin on top. Add the optional second tablespoon gelatin now if using.

  4. Secure the lid and blend on medium for about 12 seconds, until the drink is evenly cocoa-brown and a fine foamy cap covers the surface.
  5. Pour into a 12-ounce mug and serve. For a hotter drink, return it to the saucepan and warm gently until steamy without simmering.

Notes

Later Full GAPS: Use pure organic cocoa occasionally only after digestive symptoms are gone and cocoa is tolerated.
Gelatin choice: One tablespoon is the base amount. The optional second tablespoon produces finer foam, a slightly sticky lip feel, and a firmer pudding when chilled.
Scaling: The 2x control doubles each numeric ingredient for two mugs. Check the blender's hot-liquid fill limit and make separate batches when needed.
Storage: Cover and refrigerate leftovers. The gelatin will set the drink into a spoonable pudding. Warm gently in the saucepan to loosen it again.
